Abstract

Purpose

Food literacy is a multidimensional concept that prioritises the aspects individuals require to navigate the contemporary foodscape successfully. The study aims to map the knowledge base and intellectual structure of the concept of food literacy to assess if the most cited definitions reflect these constructs.

Design/methodology/approach

The inclusion criteria of full-text, peer-reviewed articles or conference papers, in English, using “food literacy” within the title, abstract, keywords or linked to the research focus produced 538 articles from the Scopus database from its inception until January 31, 2023. Articles were analysed according to exponential growth, geolocations, authors, articles, research areas and keywords using VOSviewer, CiteSpace and Excel.

Findings

Food literacy research grew exponentially between 2012 and 2022 at a rate of 50% and spanned 62 research areas, with nutrition and dietetics being the most common. Vidgen and Gallegos were the most cited authors of the most cited article, and Australia was the most influential food literacy research geolocation. Research originating from developing countries within Asia, the Middle East, Africa and South America was underrepresented, and COVID-19 impacted research trends between 2020 and 2023.

Practical implications

It is recommended to link “food literacy” to appropriate publications to increase its visibility and that food literacy be redefined and conceptualised to better reflect its intellectual structure. To complete this task, further research guided by keyword clustering can enhance conceptual understanding.

Originality/value

This study provides new insight into the knowledge base and intellectual structure of food literacy and provides scope for future research to develop the concept further.

Abstract

Purpose

This study aims to examine the effect of traditional fermentation on gari’s total heavy metal and mineral nutrient content.

Design/methodology/approach

This study used a quantitative approach, descriptive-analytical design to baseline the risk of heavy metals and experimental design to assess the effect of traditional fermentation. Data were analyzed using descriptives, univariate and multivariate analysis.

Findings

Although gari is rich in mineral nutrients (total calcium 3.9 ± 0.1 g/kg, copper 5.5 ± 0.02 mg/kg, iron 97.1 ± 5.8 mg/kg, potassium 9.1 ± 0.29 g/kg and zinc 3.4 ± 0.11 mg/kg), the significant levels of heavy metals (total arsenic 1.2 ± 0.01, cadmium 2.5 ± 0.04, lead 1.7 ± 0.01, mercury 2.8 ± 0.01 and tin 1.7 ± 0.02 mg/kg) present are a cause for concern. The results further suggested that traditional fermentation has reductive effects on some heavy metals and stabilizing or concentrating effects on mineral nutrients.

Research limitations/implications

This paper provides evidence that traditional fermentation may have exploitable differential effects on heavy metal contaminants and mineral nutrients that should be further explored.

Practical implications

Thise study reports fermentation implications for mitigating food with high heavy metal contaminants with minimal nutrient loss.

Originality/value

This study fulfills an identified need to optimize traditional fermentation to ensure food safety and nutrient security.

Abstract

Purpose

The authors developed and validated a questionnaire called “The Jordanian Food Purchasing Habits Survey” (JFPHS). The purpose of this questionnaire was to explore Jordanians’ food purchasing habits and the factors which may affect these habits among a convenient sample of people. To the best of the authors’ knowledge, no such questionnaires have been developed to measure these factors for the Jordanian population. This paper aims to describe the reasoning behind and the process of developing the (JFPHS).

Design/methodology/approach

The JFPHS investigated meal preparation and grocery shopping behaviors, nutrition label use and factors affecting purchasing of 13 (n = 13) food groups. A two-step process, a pilot test and validity study, were used to validate the questionnaire. Internal consistency (split-half reliability) tests were run on the factors in each individual food group producing Spearman–Brown correlation coefficients.

Findings

A convenient sample of 483 individuals (118 males, 365 females) participated in the study. Spearman–Brown correlation coefficients were < 0.7 for bread and between 0.7–0.8 and 0.8–0.9 for other food groups. The ingredients list grid and the expiry date grid had Spearman–Brown coefficient values > 0.9.

Social implications

This questionnaire is a valid tool to assess food purchasing behavior. Results from our questionnaire, when published, may be used to monitor trends in food consumption.

Originality/value

To the best of the authors’ knowledge, no such questionnaires been developed to measure these factors for the Jordanian population.

Abstract

Purpose

While the world is yet to fully recuperate from the social and economic repercussions of COVID-19, the Russia–Ukraine conflict poses another major threat causing a humanitarian crisis and economic shock. Although the 2030 Agenda for Sustainable Development Goals (SDGs) and its pledge to “leave no one behind” is a universal commitment to protect the livelihoods of vulnerable groups, the Russia–Ukraine ongoing conflict is causing immense suffering and a gloomy future for the 2030 Agenda. The purpose of this study is to provide a holistic understanding of the ramifications of the Russia–Ukraine war in SDGs progress around the world. Further, the authors shed light on how stakeholders can help engage in support of SDGs in such a challenging time.

Design/methodology/approach

This study is qualitative in nature and relies on secondary sources. The motive behind this study is to allow social and economic policy researchers and practitioners to learn from the Russia–Ukraine dispute. The authors conduct a preliminary factual analysis to determine patterns of how the conflict affects the SDGs Agenda. On this basis, the authors propose some recommendations.

Findings

While it is still early to measure the full impact of the war on crises worldwide, it is clear that the repercussions will be multi-dimensional. The authors argue that the conflict in Ukraine is severely threatening the achievement of the SDGs. As such, the authors identify patterns of this crisis that have halted progress on SDGs worldwide. Of all SDGs, the authors argue that SDG16 (i.e. peace and justice) is an absolute pre-requisite to sustaining other goals. Further, refugees should be economically empowered, resilient and sustainable food systems need to be put in place and renewable energy transition is required.

Research limitations/implications

This study serves as a springboard for future research by identifying patterns of war crises that have halted progress in achieving sustainable development worldwide. Empirical evidence needs to be conducted on the impact of this ongoing conflict on sustainable development and the 2030 Agenda.

Practical implications

This study could provide guidance to leaders and stakeholders across the globe on patterns for the impact of the Ukraine–Russia conflict on undermining global sustainable development while highlighting the need for major additional efforts to achieve the relevant SDGs.

Originality/value

To the best of the authors’ knowledge, this study is the first to analyse the threats the Russia–Ukraine dispute presents to the achievement of the 2030 Agenda for SDGs.

Abstract

Purpose

This paper introduces a conceptual lens for leading social change in slums and informal settlements. In line with this aim, the purpose of this case study is to describe the public problem-solving approach of a social change organization situated in an informal settlement through the lens of adaptive leadership, complexity theory and social change leadership (SCL).

Design/methodology/approach

This paper follows an engaged reflection tradition. First, the author-practitioners describe an informal settlement case hereafter called ISC in southeast Iran where many people have historically remained undocumented and uneducated. Using complex adaptive systems theory, adaptive leadership and SCL as the conceptual lens, the paper analyzes ISC as a complex adaptive context in which the community and the government are in tension in solving problems, particularly illiteracy. The instrumental case study draws from participant observation and document analysis to describe and examine the endeavors of a community office operating within ISC. Through this reflective analysis, the authors illustrate how a social change organization can effectively tackle public issues like illiteracy within informal settlements.

Findings

This paper applies complexity leadership theory to a social context. The study illustrates how social change organizations can support the transformation of informal spaces into adaptive spaces to enact social change.

Originality/value

This paper reflects on engagement activity near the insecure borders of Iran, Afghanistan and Pakistan. By extending an organizational-level theory to the public sphere, this paper contributes theoretically to the complexity theory literature. Moreover, it provides a practical insight for community development and slum upgrading projects.

Abstract

Purpose

Burrell (2020) challenged management and organization studies (MOS) scholars to pay attention to a topic they have mostly ignored: the peasantry, those 2 billion people that work in the rural primary sector. This paper aims to address the topic to expand Burrell’s challenge by indicating that the peasantry offers a unique context to study a paradoxical condition: the coexistence of persistent poverty and vanguardist innovation.

Design/methodology/approach

The authors advance conceptual arguments that complement the reasons why researchers should pay more attention to the peasantry. They argue that continuation of past research into field laborers, transitioning from feudalism to industrial capitalism, still has currency, not just because of the good reasons listed by Burrell (enduring relevance of the phenomenon in developing countries; sustainability concerns; acknowledgment of common heritage) but also because some seemingly archaic practices are evident in the economically developed countries where most management and organizations scholars live.

Findings

The authors show that in advanced economies, the peasantry has not disappeared, and it is manifested in contradictory forms, as positive force contributing to sustainable productivity (in the case of digitized agriculture) and as a negative legacy of social inequality and exploitation (as a form of modern slavery).

Originality/value

The authors discuss contrasting themes confronting management of the peasantry, namely, modern slavery and digital farming, and propose that a paradox view may help overcome unnecessary dualisms, which may promote social exclusion rather than integrated development.

Abstract

Purpose

This study aims to examine how veganism is “seen” by young adult non-vegan consumers and how prevailing attitudes reinforce or challenge stigmas around veganism.

Design/methodology/approach

Photovoice methodology was used to explore young non-vegan consumers’ attitudes and beliefs towards veganism. Data was collected from students studying advertising at a major university in Australia, who produced images and narratives reflective of their own attitudes towards veganism. Polytextual thematic analysis of the resulting visual data was then undertaken to reveal the dominant themes underpinning participants’ attitudes. Participant narratives were then reviewed to confirm whether the ascribed meaning aligned with participants’ intended meaning.

Findings

Participant images were reflective of first, how they saw their world and their place within it, which showed the interplay and interconnectedness between humans, animals and nature, and second, how they saw vegans within this world, with both positive and negative attitudes expressed. Interestingly, vegans were simultaneously admired and condemned. By situating these attitudes along a spectrum of moral evaluation, bounded by stigmatisation and moral legitimacy, participants saw vegans as being either Radicals, Pretenders, Virtuous or Pragmatists. For veganism to become more widely accepted by non-vegans, there is an important role to be played by each vegan type.

Originality/value

This study offers a more nuanced understanding of how and why dissociative groups, such as vegans, become stigmatised, which has implications for messaging and marketing practices around veganism and associated products/services. Future research could use a similar methodology to understand why other minority groups in society are stereotyped and stigmatised, which has broader social implications.

Abstract

Purpose

Burdened by undernutrition, micronutrient deficiencies and overweight and obesity as a consequence of both internal conflict and the global nutrition transition, Iraq is in need of adequate public health nutrition education to mitigate nutrition-related outcomes and risks. To address nutrition-related health outcomes, trained nutrition professionals are warranted. This paper examines current nutrition-affiliated programs offered across post-secondary institutions in Iraq.

Design/methodology/approach

An electronic review of universities and colleges’ websites, department webpages and academic programs’ homepages and resources of all the private and public universities in Iraq was conducted to find programs related to nutrition, nutrition sciences and dietetics.

Findings

All identified programs belonged to the governmental sector, were administered and financed by the Iraqi Government and were under the purview of the Iraqi Ministry of Higher Education. The review highlighted a predominant focus on food sciences in agricultural departments rather than public health or clinical nutrition. Advanced education in topics such as human metabolism, medical nutrition therapy and public health nutrition are required to adequately address over- and undernutrition in Iraq.

Originality/value

The current state of public health and nutrition-related postsecondary education in Iraq warrants an increased emphasis on clinical and public health nutrition education. Despite a commendable focus on food science studies, the country’s ongoing challenges with obesity, nutrition-related noncommunicable diseases and conflict-associated food insecurity signal an urgent need for balancing this focus with grounding in postsecondary training in public health nutrition.

Abstract

Purpose

Nutrition labels provide a cost-effective method of conveying nutrition information to consumers. This study aimed to assess the use of nutrition facts panels, knowledge of traffic light labelling (TLL) and perceived healthiness of food items using TLL among consumers.

Design/methodology/approach

A web-based cross-sectional study was conducted among adults in the United Arab Emirates (UAE) (n = 1,322). TLL knowledge score was derived for each participant. Conjoint analysis was used to calculate the utilities and relative importance of the perceived healthiness scores for four attributes (fat, saturated fat, total sugar, salt) at the aggregate level.

Findings

Participants had a positive attitude towards TLL but were less familiar with TLL than the nutrition facts panel (47.4 vs 85.8%). The mean TLL knowledge score was 3.6 out of 7 (51.6%). Younger age, higher education, higher income, and health-related qualifications were associated with higher scores. Conjoint analysis showed that participants tend to choose products with greener labels, especially for sugars (80.1%) and avoid red labels for fats. Sugars had the highest percentage value of relative importance compared to the other attributes (27.1%).

Originality/value

The study outcomes offer valuable insights into the extent of consumer awareness, comprehension and utilization of nutrition facts panels in the UAE. These findings contribute essential knowledge for a deeper understanding of the impact of nutrition labels on consumer behaviour and decision-making in the region.

Abstract

Purpose

The purpose of this paper is to critically examine the multinational oil companies’ (MOCs) corporate social responsibility (CSR) initiatives in Nigeria. Its special focus is to investigate the impact of the global memorandum of understanding (GMoU) on improving female status by improving nutrition in the Niger Delta region of Nigeria.

Design/methodology/approach

This paper adopts a survey research technique, aimed at gathering information from a representative sample of the population, as it is essentially cross-sectional, describing and interpreting the current situation. A total of 768 women respondents were sampled across the rural areas of the Niger Delta region.

Findings

The results from the use of a combined propensity score matching and logit model indicate that GMoU model has made significant impact in the key areas of assessment – gender-sensitive nutrition education, food security at household level, reduction on food taboos and female access to education.

Practical implications

This suggests that CSR interventions targeting to improve the nutrition status of girls and adolescents will help to ensure that female’s status improves throughout the life circle in the region.

Social implications

This implies that MOCs’ investment in the nutrition of female is an important short-term barometer in assessing expected returns to improving household nutrition and overall human development capacity for sub-Saharan Africa.

Originality/value

This research contributes to the inequality debate in the women’s nutrition and inclusive growth literature from the CSR perspective. It concludes that business has an obligation to help in solving problems of public concern.
