Abstract

Purpose

Flaxseed (FL) is a nutrient rich seed but contains cyanogenic glycosides, which can release hydrogen cyanide (HCN) into the body after consumption. This study aims to determine the cyanogenic content of raw and heated (170°C, 15 min) flaxseed as well as its effect on the blood thiocyanate (SCN) concentration, a derivate of HCN, in rats. Changes in liver and kidney enzymes level of blood are further studied.

Design/methodology/approach

Rats were assigned into groups of control, 10 percent, 20 percent and 30 percent of either raw or heated FL, in basal diet, for duration of 30 days. Cyanogenic content of FL analyzed using picrate method and blood thiocyanate concentration analyzed using high performance liquid chromatography.

Findings

Raw ground flaxseed had 251.14±9.11 mg HCN/kg food, which significantly reduced by 8.5 percent after heating. Generally heated FL groups showed lower (but not significant) blood thiocyanate compared to raw FL groups. Blood SCN elevated by increasing the dosage of flaxseed. However, only in 30 percent raw FL group the difference was significant (p<0.05). Liver and kidney enzymes were not changed significantly in all groups (p>0.05). This study suggests that consumption of flaxseed in high dosage (20 percent to 30 percent) is better to be in heated form to result in lower blood thiocyanate concentration.

Originality/value

This study may provide better understanding for safer usage of flaxseed in animals and even human interventional studies and may be applicable to flaxseed consuming food industries.

Abstract

Purpose

Phytochemicals are known for their iron chelation ability with no side effects. Lignans and polyphenols in flaxseed have iron-chelating and antioxidant abilities. Therefore, this study aims to assess the ability of flaxseed to reduce iron overload and minimize its negative health effects.

Design/methodology/approach

A randomized control trial was conducted. A total of 96 patients were enrolled in this study and randomized into three groups: two intervention groups had 3 or 7 g of whole flaxseed and a control group took a placebo (gram seeds). Interventions were administered for 12 weeks. A hematological profile, ferritin quantification in serum, and liver function tests were performed to evaluate the effects of flaxseed.

Findings

It was observed that flaxseed with synthetic iron chelators caused a significant reduction in ferritin levels compared with synthetic chelators. The pre-transfusion hemoglobin level was also improved in the intervention group. A significant reduction (p value 0.0003) in ferritin levels among intervention groups indicated that flaxseed reduced the iron overload. It can be concluded that flaxseed reduced iron overload in thalassemia major patients with no side effects and may reduce iron overload solely when taken in adequate quantity.

Originality/value

Although the study targets a non-specific protein-ferritin for the evaluation of iron-overload, the initial ferritin value and reduction in these levels indicate the efficacy of ferritin for reducing iron overload in thalassemia major patients. Moreover, this is the first study, to the best of the authors’ knowledge, that demonstrates the iron-chelation ability of flaxseed in thalassemia major patients, suggesting the use of flaxseed for iron chelation.

Abstract

Purpose

The purpose of this review of the literature is to provide data about flaxseed intake during pregnancy and/or lactation and its effects in the offspring from birth to adulthood.

Design/methodology/approach

This review includes up-to-date information from evidence-based sources on flaxseed intake and its by-products, during pregnancy and lactation and its effects on male and female offspring, from post-weaning until adulthood. Topics included are effects on body mass; glycaemic metabolism; lipid profile; blood pressure and aortic structure; reproductive system and brain tissue.

Findings

The main effects of flaxseed or its by-products were observed in the cardiovascular system, where a lipid profile improvement and minor aortic remodelling were noticed, and in the cerebral development, where greater n-3 PUFA incorporation in the brain was detected.

Originality/value

The research done in this study, to understand the offspring response that were early exposed to the flaxseed components during pregnancy and lactation, may be the first step toward guiding future strategies for recommending the use of this seed during the offspring’s perinatal period.

Abstract

Purpose

The purpose of the present study was to plan with the objectives to optimize and find out the best level of texturized protein from sunflower, soybean and flaxseed on the basis of quality and overall acceptability of the cookies.

Design/methodology/approach

Defatted meal from sunflower, soybean and flaxseed was texturized using extruder. Texturized defatted meal of sunflower, soybean and flaxseed was blended at 10, 20, 30 and 40 per cent levels with wheat flour for making cookies using standard procedure.

Findings

Functional properties such as water absorption index, foaming capacity and protein digestibility were increased, while water solubility index and fat absorption capacity decreased with increased levels of texturized defatted meal in wheat flour. Spread ratio, sensory, colour and overall acceptability of cookies were negatively affected when level of texturized flour increased as compared with the control. The force required for breaking cookies decreased with increased level of texturized defatted meal of sunflower, soybean and flaxseed incorporation. Cookies with 10 per cent texturized sunflower, soybean and flaxseed flour received the highest sensory scores. The result showed that texturized defatted meals serve as good substitute to wheat flour with increased protein content in cookies production and utilization.

Originality/value

The study demonstrated that deoiled cake, a byproduct obtained from sunflower, soybean and flaxseed oil industry, offers great potential for supplementation of proteins in food products.

Abstract

Purpose

Flaxseed is considered as a source of functional ingredients because it contains alpha-linolenic acid and high amount of dietary fiber which provides potential health benefits. Therefore, this paper aims to evaluate the effect of flaxseed flour on the quality of mutton nuggets.

Design/methodology/approach

Mutton nuggets were incorporated with three different levels of hydrated flaxseed flour (1:1), namely, 4, 8 and 12 per cent to optimize the level of incorporation. Detailed profile analysis was carried out to study various physico-chemical parameters, texture profile analysis and color values in the product with optimum level and compared with control product.

Findings

There was no significant difference (p > 0.05) in sensory attributes of product with 4 and 8 per cent level of incorporation except for binding; however, significantly lower (p < 0.01) scores were observed for 12 per cent incorporation level. On the basis of sensory scores, 8 per cent level of incorporation was adjudged as optimum. Incorporation of flaxseed flour resulted in significantly lower (p < 0.01) moisture content, but higher (p < 0.01) fat and dietary fiber content. Texture profile analysis showed increased hardness of the product but resulted in decreased springiness and chewiness parameters. Incorporation of flaxseed flour significantly increased (p < 0.01) redness and yellowness of the product which improved overall acceptability.

Abstract

Purpose

The objective of this study was to assess the incorporation of polyunsaturated omega 3 and omega 6 fatty acids in the eggs of Japanese quails (Coturnix coturnix japonica) fed with soybean, flaxseed and shark liver oils, as well as to assess their effects on the chemical composition and lipid quality of the yolks.

Design/methodology/approach

The total of 252 units of quails were distributed in a completely randomized design with seven treatments and six replications, totaling 42 experimental design units. The sources of oils and their inclusions in the experimental diet were 2% of soybean oil (S), 2% of flaxseed oil (L) and 2% shark liver oil (T), obtained from the species Carcharhinus acronotus, and the mixtures of 1% S + 1% L (SL); 1% S + 1% T (ST); 1% L + 1% T (LT) and 0.67% S + 0.67% L + 0.67% T (SLT).

Findings

The proximate composition of the egg yolk was not changed to the supplementation of lipid sources added in quail diet. The total replacement of soybean oil by shark liver oil reduced the cholesterol content in the yolk by 19% (T = 282.97 mg cholesterol/100 g egg) and the addition of flaxseed oil produced eggs with greater amount of polyunsaturated fatty acids (PUFAs) (LS = 18.32%). The treatments with flaxseed oil and its mixtures (soybean oil + flaxseed oil and flaxseed oil + shark liver oil) effectively contributed to reducing the ω-6:ω-3 ratio and enriching the quail eggs with PUFAs, especially linolenic acid (18: 3n3c) and EPA (20: 5n3c).

Originality/value

Thus, manipulation in the diet of quails enriched the content of essential PUFAs and reduced the cholesterol content in the yolk. The flaxseed oil was the lipid source that influenced to improve the quality of the egg yolk. These results have practical applicability for the quail egg industry.

Abstract

Purpose

Cookies were not generally viewed as functional contributors to well-being as they are primarily perceived as confectionery products. The purpose of this paper is to evaluate the potential of flaxseed-enriched cookies as carriers of lignans and omega-3 fatty acids – functional compounds that are lacking in the western diet.

Design/methodology/approach

An online questionnaire collected data from Croatian consumers (n=1,035). The majority of the samples were women (73 per cent) in the age range 15-65 years (97 per cent). Most participants were employed, had a higher education degree, and lived in urban areas. Questions examined the consumption of cookies and flaxseed, interest for functional cookies, nutritional knowledge, and awareness.

Findings

Majority of subjects consumed cookies (93 per cent), while 61 per cent did not eat flaxseed or ate it less than once a month. The consumers showed elevated interest for the functional cookies with flaxseed, among which elderly women with higher nutrition awareness, and nutrition knowledge were the most interested. Functional cookies with flaxseed could be used for delivery of lignans and omega-3 fatty acids in everyday diet, but in order to reach wider range of consumers producers might benefit from employing nutritional educational marketing campaigns.

Originality/value

Data from the study decreased scarcity of information on consumer behaviour related to flaxseed consumption and on potential use of cookies as a functional food. Reported findings will be useful to dieticians, food industry, and food researchers in countries with a high prevalence of cookie consumption.

Abstract

Purpose

The purpose of this study is to successfully apply ultrasonic waves for the quick extraction of flax seed gum from flaxseed hull or whole seed and compare it to the standard technique of extraction.

Design/methodology/approach

The effect of the heating source, extracted time, temperature and pH of extracted solution on the extraction was studied. The obtained gum is subsequently used for silk screen printing on cotton, linen and viscous fabrics. Rheological properties and viscosity of the printing paste were scrutinized in the current study to get a better insight into this important polysaccharide. The output of this effort aimed to specify the parameters of the processes for printing textiles to serve in women’s fashion clothes by applying innovated handmade combinations of Islamic art motives using a quick and affordable method. Seven designs are executed, and inspiring from them, seven fashion designs of ladies’ clothes were designed virtually by Clo 3D software.

Findings

The result recorded that the new gum has excellent printing properties. In addition, they have better rheological properties, viscosity, chromatic strength and fastness qualities, all of which could help them in commercial production.

Research limitations/implications

Flaxseed and three different fabric types (Cotton, Linen and Viscous) were used.

Practical implications

Synthesis of a new biodegradable thickener from a natural resource, namely, flaxseed, by applying new technology to save time, water and energy.

Originality/value

Synthesis of eco-friendly biodegradable thickener and used in textile printing alternative to the synthetic thickener.

Abstract

Purpose

The purpose of this study is to evaluate the effects of flaxseed (L. usitatissimum [Linn]) on blood pressure, redox status markers and acetylcholinesterase enzyme activity in ouabain-induced hypertension in normal Wistar rats.

Design/methodology/approach

Male Wistar rats weighing 250 ± 7 g (n = 24) fed with an experimental diet containing 20 per cent casein were divided into three groups (n = 8) and received a daily subcutaneous injection of either 0.9 per cent saline solution (T group) or 10 µg/kg/day of ouabain diluted in saline solution-treated Oub-Lu or not with 1 per cent of flaxseed (L. usitatissimum) mixed in the diet for 21 days.

Findings

The results showed that treatment with flaxseed had a significant effect (p < 0.05) in decreasing systolic, diastolic blood pressure, mean arterial pressure and the heart rate in hypertensive rats. Total and non-HDL cholesterol levels were reduced by –26 and –35 per cent; p = 0.04, respectively. Concentrations of thiobarbituric acid-reactive substances were significantly decreased by –85 and –42 per cent (p = 0.001 and p = 0.04), respectively in the plasma and heart. Nitric oxide levels were increased in the aorta (+ 63 per cent; p = 0.001). Moreover, in the heart and aorta, a significant increase was noted in the thiol contents (+81 and +69 per cent; p = 0.001, respectively), glutathione peroxidase (+50 per cent; p = 0.03 and p = 0.01, respectively) and acetylcholinesterase activities (75 and +19 per cent, respectively; p = 0.001 and p = 0.04).

Originality/value

These results suggest hypotensive, cardiomoderating and antioxidant effects of flaxseed in ouabain-induced hypertension in the rat. In addition, it promotes a significant increase of the acetylcholinesterase activity in tissues.

Abstract

Purpose

The mucilage of the Linum usitatissimum L. seed (Linseed) is one of the natural mucilages that presents a great potential to provide a food hydrocolloid with potential applications in both food and pharmaceutical industries. To increase the yield and quality of linseed oil during its production process, it is necessary to previously extract its polysaccharides. Because of this, flax mucilage production can be made viable as a byproduct of oil extraction process, which is already a product of high commercial value consolidated in the market. Thus, the purpose of this work is to optimize the mucilage extraction process of L. usitatissimum L. using the normal-boundary intersection (NBI) multiobjective optimization method.

Design/methodology/approach

Currently, the variables of the process of polysaccharide extraction from different sources are optimized using the response surface methodology. However, when the optimal points of the responses are conflicting it is necessary to study the best conditions to achieve a balance between these conflicting objectives (trade-offs) and to explore the available options it is necessary to formulate an optimization problem with multiple objectives. The multiobjective optimization method used in this work was the NBI developed to find uniformly distributed and continuous Pareto optimal solutions for a nonlinear multiobjective problem.

Findings

The optimum extraction point to obtain the maximum fiber concentration in the extracted material was pH 3.81, temperature of 46°C, time of 13.46 h. The maximum extraction yield of flaxseed was pH 6.45, temperature of 65°C, time of 14.41 h. This result confirms the trade-off relationship between the objectives. NBI approach was able to find uniformly distributed Pareto optimal solutions, which allows to analyze the behavior of the trade-off relationship. Thus, the decision-maker can set extraction conditions to achieve desired characteristics in mucilage.

Originality/value

The novelty of this paper is to confirm the existence of a trade-off relationship between the productivity parameter (yield) and the quality parameter (fiber concentration in the extracted material) during the flaxseed mucilage extraction process. The NBI approach was able to find uniformly distributed Pareto optimal solutions, which allows us to analyze the behavior of the trade-off relationship. This allows the decision-making to the extraction conditions according to the desired characteristics of the final product, thus being able to direct the extraction for the best applicability of the mucilage.
