Abstract

Purpose

Dahlia is an ornamental plant originating from Mexico where it is considered as the National flower. The purpose of this paper is to investigate tubers from yellow, white and red‐flowered cultivars of the common garden Dahlia (D. pinnata) for their chemical composition.

Design/methodology/approach

The composition of minerals was determined using Atomic Absorption Spectrometry (AAS), whereas vitamins were analyzed by High‐Performance Liquid Chromatography (HPLC).

Findings

Carbohydrates represented the major constituent in Dahlia tubers, followed by fibre and protein. Tubers of the yellow‐flowered cultivar “HGH” contained the highest amount of carbohydrates, while tubers of the white‐flowered cultivar “BJ” and those of the red‐flowered cultivar “XM” abounded in fibre and protein, respectively. In addition, Dahlia tubers exhibited varying concentrations of minerals, among which potassium, calcium, magnesium, phosphorus, zinc and chromium were predominant. Tubers of the white‐flowered cultivar “LB” contained the highest amounts of magnesium and phosphorus. Moreover, tubers of the red‐flowered cultivar “MLH” showed the highest contents of potassium and chromium, whereas those of the red‐flowered cultivar “XM” were rich in calcium and zinc. Furthermore, Dahlia tubers were found to contain water and fat soluble vitamins, among which vitamins B2, B6, B7 and E were the most abundant. Tubers of the white‐flowered cultivar “BJ” exhibited the highest contents of water soluble vitamins, whereas those of the white‐flowered cultivar “LB” abounded in fat soluble vitamins.

Originality/value

Despite the considerable variability observed among cultivars, Dahlia might be utilized as an alternative food resource for human nutrition.

Abstract

Purpose

The aim of this study is to find out the appropriate fermentation conditions of Jerusalem artichoke powder (JAP) based media to obtain light beverage containing inulin.

Design/methodology/approach

JAP water suspension or filtrate were used for preparation of growth media with or without enzymatic hydrolysis of inulin for fermentation by Zymomonas mobilis 113 “S” or Saccharomyces cerevisiae.

Findings

If enzymatic hydrolysis of inulin was not used significantly higher amount of inulin (7.42 per cent) was unconverted by Z. mobilis than by S. cerevisiae (2.22 per cent) while the ethanol concentration was much higher (2.86 per cent) after S. cerevisiae fermentation than after Z. mobilis fermentation (1.21 per cent). Considerably more ethanol was produced by Z. mobilis during co‐fermentation with Fructozyme L of JAP suspension filtrate (5.98 per cent) and suspension (4.96 per cent). Analyses of volatile components of fermentation broths showed that for production of inulin containing light beverages the best was Z. mobilis fermentation of JAP water suspension or filtrate without enzymatic treatment. FT–IR spectroscopy can be used as a quick semi‐quantitative method for evaluation of inulin content.

Originality/value

JAP – containing not only inulin but all tuber ingredients, was used as a media for ethanol fermentations by Z. mobilis 113 “S” or S. cerevisiae with or without hydrolysis of inulin. It was shown that Z. mobilis fermentation broths containing 7.42 per cent of inulin can be used as beverage with prebiotic‐dietary fibre benefits. The taste of this product can be regulated by appropriate fermentation conditions and the concentration of fructose and ethanol.

Abstract

Purpose

Diabetes is a chronic metabolic disease that accounted for 6 per cent of total Indonesian deaths in 2016. The purpose of this study is to evaluate the ability of milk fermented using intestinal origin Lactobacillus casei strains to alleviate hyperglycemia in rats.

Design/methodology/approach

L. casei strains AP and AG were previously isolated and identified from feces of breastfed Indonesian infants (<1 month-old) and confirmed to be probiotics in vitro. These strains were used as bacterial starters to ferment milk, and the fermented product was fed to 25 diabetic rats for 15 days; metformin was used as a positive control. Blood glucose concentration, lipid profiles and total lactic acid bacteria counts were analyzed before and after treatment.

Findings

The results showed that feeding rats with milk fermented using L. casei strain AP decreased blood glucose concentration from 172.4 ± 2.1 to 147.2 ± 6.0 mg/dL (p < 0.05), whereas metformin reduced blood glucose concentration from 173.5 ± 6.5 to 124.2 ± 16.9 mg/dL (p < 0.05). Feeding milk fermented either L. casei AP or AG decreased low density lipoprotein but increased high density lipoprotein levels (p < 0.05).

Research limitations/implications

This research finding is expected to increase the development of fermented dairy products as functional food, solutions for the prevention of hyperglycemia diseases which have a higher risk to occur on humans.

Practical implications

Further study is needed to examine the effect of L. casei AP-fermented milk on humans with hyperglycemia.

Social implications

This research finding is expected to increase the development of fermented dairy products as functional food.

Originality/value

Oral administration of L. casei AP-fermented milk reduced hyperglycemia in rats similar to metformin. Further study is needed to examine the effect of L. casei AP-fermented milk on humans with hyperglycemia.

Abstract

Purpose

Participation in urban horticulture (UH) is increasing in popularity, and evidence is emerging about the wide range of social and environmental benefits “grow your own” can also provide. UH can increase mental and physical well-being, as well as improve nature connectedness, social capital and community cohesion.

Design/methodology/approach

This study focusses on allotments, which is one of the dominant forms of UH that takes place in the United Kingdom. 163 volunteers in England and Wales participated in keeping a year-long allotment diary as part of a citizen science project investigating activities on allotment gardens. This study examines the unprompted comments that 96 of these gardeners offered as observations when visiting their allotment plots.

Findings

Participants recorded high levels of social and community activities including the sharing of surplus food produce, knowledge exchange, awareness and interaction with wildlife, emotional connection to their allotment, appreciation of time spent outside and aesthetic delight in the natural world around them.

Originality/value

At a time when waiting lists for allotment plots in the United Kingdom are on the rise, and allotment land is subject to multiple pressures from other forms of development, this study demonstrates that these spaces are important sites not only for food production but also health, social capital and environmental engagement.

Abstract

Purpose

The purpose of this paper is to explore the variety of food in which it has been applied as a prebiotic and functional ingredient, the concentrations used there in, the tests that have been conducted on these fortified foods and briefly reviews the history and characteristics of inulin.

Design/methodology/approach

The review included articles from 1999-2013. The papers which reported inulin concentrations used, the purpose of the application and tests on final product, were mainly selected. Articles were collected in electronic databases such as Elsevier-Science Direct, Emerald, Springer Link, Wiley and Redalyc.

Findings

The interaction inulin-food with different food matrices is complex, and is not always technologically favorable for the product. Moreover, additional to evaluations of sensory, physicochemical and rheological characteristics, it is essential to carry out measurements in the food, of such characteristics as prebiotic content, and prebiotic activity in vivo and in vitro, and assess potential adverse reactions in order to define suitable doses of consumption.

Originality/value

The paper highlights the importance of conducting in vitro and in vivo testing of potential prebiotic inulin-supplemented food in order to define dose that benefit health and do not cause unacceptable gastrointestinal distress.

Abstract

Suggests that though inulin is an oligosaccharide of dietary interest as a bifidogenic factor, little consideration appears to have been given to its behaviour in foods. Establishes that inulin would be entirely suitable for incorporation into natural or stirred fruit yogurt, in that it enhances the organoleptic properties of the product(s), and at inclusion levels which could be valuable from a nutritional standpoint.
