Abstract

Purpose

The purpose of this study was to isolate Whitemouth croaker protein by alkaline solubilization process and evaluate their nutritional quality to evaluate the bioavailability of essential amino acids.

Design/methodology/approach

The proximate composition, essential amino acid composition, in vitro digestibility, apparent bioavailability, chemical score of amino acids and SDS-PAGE were determined for the isolated croaker proteins.

Findings

The isolated protein showed a high level of protein 92.21 percent and low amount of lipids 0.57 percent. The protein is rich in lysine and leucine, 108.73 and 96.75 mg/g protein, respectively. The protein isolate had high digestibility, 94.32 percent, which indicates proper utilization of this protein source, while the tryptophan had lower bioavailability (12.58 mg amino acid/mg protein). The high chemical scores were found for the amino acids lysine, methionine+cysteine (6.79 and 5.14). SDS-PAGE of proteins extracted showed appearance of the heavy chain of myosin (220 kDa), actin (50 kDa) and other fractions, with molecular weight between 20 and 50 kDa, such as troponin I, C and T.

Originality/value

The products obtained from croaker muscle can be incorporated as a high value supplements in human diets. The isolated protein exhibited a high content of essential amino acids and digestibility, indicating that the protein has a high nutritional quality.

Abstract

Purpose

The Mediterranean diet is one of the healthiest eating patterns and relies much on the regular consumption of fish, which is a source of unsaturated fatty acids, protein, vitamins and minerals. The purpose of this study was to describe and compare the macronutrients and micronutrients profile of 24 commercial fish species available in the Portuguese market.

Design/methodology/approach

A comparative study was undertaken based on nutritional datasheets provided by laboratories and based on the database of the Portuguese National Health Institute Doutor Ricardo Jorge.

Findings

The results obtained showed that while most of the fish species are low-fat, gilthead and salmon are considered high in fat, with salmon presenting significant amounts of unsaturated fatty acids. The blue shark shows the highest amounts of protein, whereas codfish shows significantly high levels of salt content. Sardine is much richer in terms of vitamins than the other species. With respect to minerals, there is a lot of variation among species. It is worth noticing the skate, with high amounts of sodium, calcium and phosphorous. Statistical analysis evidenced some relations between the properties evaluated, and it was possible to establish two distinct groups of fish through cluster analysis.

Practical implications

The species evaluated revealed a highly important nutritional value that should be an incentive to their regular consumption. Moreover, a lack of nutritional information about some micronutrients was found in several fish species, which should be studied in future studies.

Originality/value

This paper fulfils an identified need to compare nutritional composition of fish available in Portugal.

Abstract

Purpose

The rapid transition from a command to market‐based economy in China has required the development of a food safety system for aquatic products where one did not previously exist. The pace of change has meant that food safety systems have struggled to keep up. In 2007 food safety incidents damaged the reputation of aquatic products in export markets. The Chinese Government has moved quickly to strengthen the safety regime for aquatic products. The purpose of this paper is to assess these initiatives in the context of their potential to regain international acceptance of Chinese aquatic products.

Design/methodology/approach

A regulatory assessment approach is used.

Findings

The findings are that increased government oversight alone is not likely to lead to a fully effective food safety system for aquatic products. The development of private sector‐based incentives to encourage investment in food safety is an essential co‐requisite to increased government oversight if China's access to international markets is to be assured.

Originality/value

The value of this study lies in the light it sheds on the efforts of a major player in the international market for aquatic products to improve the efficacy of its food safety system. China's regulatory regimes are often opaque, limiting the ability of those wishing to assess the advisability of importing food products from China.

Abstract

Purpose

The purpose of this paper is to determine whether the application of the minimalist approach is appropriate in distance learning (DL).

Design/methodology/approach

A survey of faculty who have participated in DL training courses at a university in the southeastern USA was conducted. In total, 72 faculty completed the survey, for a response rate of 34 percent.

Findings

Survey research findings demonstrate support for the suitableness of a minimalist approach to DL, as results indicate that faculty members do not need more training or more technology. In fact, results suggest there may be an excess of technological options, many of which are not being utilized.

Practical implications

In order to apply a minimalist approach to DL and in consideration of the survey results, the authors posit that fewer technologies should be used, the training required to teach an online course should be applied and simplified, and the technologies implemented in a DL course should be uncomplicated

Originality/value

Drawing from the literature on the minimalist approach to resourcefulness, a new lens with which to consider DL is presented. There have been few applications of minimalism within the IS literature. The minimalist approach presented herein is fitting given the budget reductions that have impacted higher education since the recession.

Abstract

THE Woolwich Borough Council have made the retirement of Dr. Baker from the post of Borough Librarian the opportunity of adopting the reactionary policy of dividing the Woolwich library system into three independent parts. They do not propose to fill Dr. Baker's post, and have made three members of the staff librarians‐in‐charge of the Woolwich, Eltham, and Plumstead libraries. Within recent years West Ham and Lewisham have adopted a similar policy; while an opposite course has been taken by Southwark and Westminster. It is obvious that an already limited income will be even more inadequate when it is administered in three separate parts. A small temporary advantage may accrue to certain localities of the borough, but the library service of the borough as a whole is bound to suffer. There is plenty of evidence that the greatest library service can be given to a district when the libraries form one organic whole. So much for the present; now for the future. Woolwich is growing rapidly in some localities, and when the inevitable library extension is required, what is going to happen ? Each of the older districts is going to be mulcted of a part of its already far from adequate share in order to finance still another separate administration. Instead of the Borough library service under one administration becoming increasingly efficient with the growth of the district, it is going to remain a series of small and comparatively ineffective units. Then there is another aspect of the question which touches us even more closely professionally. If library systems are going to be divided in this way, men and women are not going to be found willing to go through the long and special training necessary for an administrative librarian, because the position of “librarian‐in‐charge” is no return for such training. In this way, if this policy is going to spread, a much more serious blow still will be struck at the library efficiency of the country.

Abstract

Purpose

The aim of the paper is to shed light on the use of chitosans and chitooligosaccharides as biopreservatives in various foods animal. Foods of animal and aquatic origin (milk, meat, fish, eggs, sea foods, etc) become contaminated with a wide range of microorganisms (bacteria, molds and yeasts) during harvesting, transporting, processing, handling and storage operations. Due to the perishable nature of these foods, their preservation is of utmost importance. Though many synthetic chemicals are available, yet their use is quite restricted due to their hazardous effects on human health.

Design/methodology/approach

Within the domain of food industry, traditionally chitosan is used for biopreservation of foods, which is well known for its nutritional and medicinal properties in human nutrition. However, chitooligosaccharides also possess a number of nutraceutical and health promoting properties in addition to their preservative effect and shelf-life extension of foods. In this study, the comparative effects of both chitosan and chitooligosaccharides on preservation of foods of animal and aquatic origin have been summarized.

Findings

Though chitosan has been extensively studied in various foods, yet the use of chitooligosaccharides has been relatively less explored. Chitooligosaccharides are bioactive molecules generated from chitosan and have several advantages over the traditional use of chitosan both in food products and on human health. But unfortunately, little or no literature is available on the use of chitooligosaccharides for preservation of some of the foods of animal origin. Notable examples in this category include cheese, beef, pork, chicken, fish, sea foods, etc.

Originality/value

This paper focuses on the effects of chitosans and chitooligosaccharides on the processing and storage quality of foods of animal and aquatic origin, which offers a promising future for the development of functional foods.

Abstract

The Conference of the Library Association, which took place at T Bristol, on September 25th to 2Sth, 1900, will be remembered chiefly as a highly successful and enjoyable series of social events, for which the local arrangements were admirable. The atmosphere of the old city itself, with its memories of Cabot, Chatterton, the Slave Trade, and John Silver, to name only the more romantic, threw a glamour over the whole meeting, and the consequence was that, even the small rump of practicality which had been added to the proceedings for the look of the thing, was absorbed in the interest of the surroundings. Who was going to waste time, had there been any to waste, discussing the value of abstract lectures on—say bees, to public librarians, when, outside in the fresh, open air, dainty bands of Red Maids challenged attention, and the magnificent gorge of Clifton fascinated every lover of books and nature ? It was putting too great a strain upon the enthusiasm of members to expect them to forsake the beauties of a fine city for a bare and flavourless hash of papers which would do little credit to the smallest local branch of the Association. We do not in any way reflect upon the literary ability of most of the papers presented, which was uniformly high, nor upon their antiquarian interest, which, again, was great ; but we must deny the utility of most of the papers which were read, as incentives to discussion, or as in any way forwarding the main cause for which the Library Association was formed. Fourteen papers were put down for discussion, and of these only five had any direct connection with library work. Three others had a certain bearing upon the work of libraries established under the Public Libraries' Acts, while the remaining six were papers of local or literary interest. We do not complain so much about the composition of the programme, as against the cutting down of the time allotted to the discussions. If the whole business of the meeting had been to discuss the papers of Messrs. Aldred (“ book Selection and Rejection ”); Hulme (“ Principles of Dictionary Subject Cataloguing”); and Doubleday and Quinn (“Dictionary versus Classified Catalogues”), and nothing else, the time of the Conference would not have been frittered away as it was, but the Cataloguing papers were never even reached, while the one on “ Book Selection ” only survived to the discussion stage, because its author had the foresight to have it printed in advance. Next year the Council will, perhaps, organise afternoon sessions on questions pertaining to library work, for those who have no particular interest in the manufacture of soap, linoleum, or tobacco.

In this paper, the case is made for why learning agreements play an essential role in the work‐based programmes run by the National Centre for Work Based Learning Partnerships (NCWBLP) at Middlesex University. Their crucial role is the result of the opportunity afforded students to customise their programme of study around their own and their employer’s work needs. A particular focus of attention is the role of learning agreements in programmes developed with employer partners at under‐ and postgraduate levels. Case studies of partnership programmes developed with three different organisations are discussed – a metropolitan borough council, a multinational company and a college of further education.

Abstract

Purpose

Being interested in developing a natural preservative for the prolongation of shrimp shelf life, this study aims to evaluate the Sargassum horneri extracts for their antioxidant effect, copper reducing power, copper chelating activity and polyphenol oxidase (PPO) inhibitory activity, as well as explored their potential preservative activity in white leg shrimp.

Design/methodology/approach

The antioxidant properties of Sargassum horneri 75% ethanol aqueous extracts were measured by 2,2-diphenyl-1-picryl hydrazyl (DPPH), 2,2-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), ferric reducing antioxidant power (FRAP) and PPO inhibitory activity. Sample III displayed the highest antioxidant activity, PPO inhibitory activity, copper reducing power and copper chelating activity, so it was selected for further studying its impact on shrimp's quality changes such as pH value, total volatile basic nitrogen (TVB-N), thiobarbituric acid reactive substances (TBARS), melanosis and sensory score during storage at 4°C.

Findings

Among all three samples, sample III containing 49.88% total phenolic contents was selected for the further study on the prevention of quality loss and melanosis of shrimp, because it yielded the highest antioxidant activity, PPO inhibitory activity, copper reducing power and copper chelating activity than the other two samples (samples II and IV). It was found that shrimp treated with 0.2% sample III had the lowest melanosis scores throughout the storage (p < 0.05). During ten days of storage at 4°C, shrimp treated with 0.2% sample III had a higher score in sensory properties (color, segments, texture and odor), compared with the control, 0.1% kojic acid and 0.1% sample III treated shrimp (p < 0.05). The results indicated that the treatment of shrimp with 0.2% sample III could extend the shelf life to eight days at 4°C.

Social implications

The extracts of Sargassum horneri displayed potent PPO inhibition, antimicrobial and antioxidant properties. Importantly, the 75% extracts of Sargassum horneri could extend the shelf life. Considering these results, the extracts of Sargassum horneri may be used as natural preservatives in the food industry after further evaluation of their other properties such as toxicity, as well as provide a choice target to source natural products intended for cosmetics.

Originality/value

The originality of this paper lies in the development and application of the extracts of edible algae. To extend the shelf life of seafood, the polyphenolic-rich extract of Sargassum horneri provided another possible selection.

Abstract

Purpose

This paper aims to evaluate hematological parameters, blood glutathione (GSH), serum glucose-6-phosphate dehydrogenase (G6-PD) and liver function in favism animals' models after oral intake with a mixture of pickled olives and Vicia faba (V. faba) seeds.

Design/methodology/approach

Favism is a life-threatening hemolytic crisis. It results from the ingestion of V. faba by the individuals. The hemoglobin (Hb), hematocrit (Hct), red blood cells (RBCs), white blood cells (WBCs), serum glucose, blood GSH, serum G6-PD, serum thiobarbaturic acid reactive substances (TBARS), liver protein and liver function were evaluated after oral administration with a mixture of pickled olives with V. faba seeds in favism animals' models.

Findings

The favism-, vicine- and convicine-treated animals showed a significant decrease (p < 0.01) in Hb (6.42, 7.23 and 5.96 g/dl), Hct (25.4, 26.4 and 25.1%), RBCs (2.56, 2.45 and 2.60 106 cells/mm3, WBCs (4.35, 4.25 and 4.30 103 cells/mm3), serum glucose (95.8, 97.1 and 96.5 mg/dl), blood GSH (24.7, 26.6 and 23.8 mg/dl), serum G6-PD (15.8, 15.9 and 15.7 U/L), serum aspartate aminotransferase (6.35, 6.59 and 5.97 U/L), alanine aminotransferase (4.49, 4.61 and 4.50 U/L), total protein (6.54, 6.59 and 6.40 g/dl), albumin (3.84, 3.91 and 3.75 g/dl), globulin (2.70, 2.48 and 2.65 g/dl) and liver protein (3.37, 3.10 and 3.42 g/g tissue) but a significant increase (p < 0.01) in serum TBARS (38.7, 38.9 and 39.4 nmol/dl), alkaline phosphatase (275, 271 and 281 U/L) and total bilirubin (0.93, 0.89 and 0.91 mg/dl) compared to Hb (16.3 g/dl), Hct (45.3%), RBCs (5.80 106 cells/mm3), WBCs (9.45 103 cells/mm3), serum glucose (96.5 mg/dl), blood GSH (39.7 mg/dl), serum G6-PD (36.1 U/L), serum TBARS (18.0 nmol/dl), serum aspartate aminotransferase (19.8 U/L), alanine aminotransferase (9.23 U/L), alkaline phosphatase (214 U/L), total bilirubin (0.57 mg/dl), total protein (8.76 g/dl), albumin (4.85 g/dl), globulin (3.91 g/dl) and liver protein (6.28 g/g tissue) in control group. The oral administration with pickled olives + V. faba, pickled olives + vicine and pickled olives + convicine into favism animals' models, vicine-treated animals and convicine-treated animals, respectively pushed all the above-mentioned parameters to near the control levels.

Originality/value

V. faba contains vicine and convicine glycosides. Vicine and convicine glycosides in V. faba are hydrolyzed by intestinal microflora to aglycones divicine and isouramil, respectively. Divicine and isouramil are highly reactive compounds generating free radicals where divicine and isouramil are the main factors of favism. The ß-glucosidase in pickled olives converts both vicine and convicine glycosides into aglycones divicine and isouramil, respectively, in aerobic condition outside the human body (in inactive forms) and prevent these glycosides to cause favism.
