Abstract

Purpose

Chinese consumers have increased their consumption of grape products in recent years due to recognition of the nutritional value of grapes. At the same time, consumers are paying more attention to food safety because of the occasional occurrence of food safety scares. Based on a survey of consumers in Zhejiang, China, this paper aims to understand and provide information on consumers' perceptions of quality and safety for grape products, purchasing behavior, and willingness to pay (WTP) for grape products.

Design/methodology/approach

This paper presents the results of empirical research. The survey method was a direct (face‐to‐face) interview based on a standardized questionnaire. Consumers' perceptions of the quality and safety of grape products were examined, together with consumers' demographic characteristics.

Findings

The results indicate that quality and safety, rather than price, are considered the most important factors that affect consumers' purchasing decisions for grape products. Consumer's educational level, the average price of grapes and the perception of safety are the main factors that determine consumers' WTP for grape products. As price increases, the consumer's WTP for safe and high quality grapes decreases.

Originality/value

This research provides a chance to understand consumers' demand and WTP for the quality and safety of grape products in Zhejiang, China. Further understanding was gained regarding factors affecting consumers judging grape products, which in turn may influence their purchase decisions. The results also could guide grape growers to supply products that better meet consumers' needs. It is proposed that the Chinese government pay more attention to taking measures to improve the quality and safety of grape products.

Abstract

Purpose

The research presented here aims to gain understanding of consumers' perceptions of the concepts of food quality and safety, two concepts that play an important role in how consumers perceive food, and that are used in decision making.

Design/methodology/approach

Qualitative semi‐structured interviews (n=163 consumers) were held in four European countries (Germany, France, Italy and Spain). Consumers' own definitions of the two concepts of food quality and safety were examined, together with the perceived interrelationship between quality and safety, and whether these concepts were linked to improved food chain traceability.

Findings

The results indicate that most consumers see food quality and food safety as interlinked concepts, which becomes evident in their partly overlapping definitions of the two concepts. Consumers believe both food safety and quality are important to food in general, but pay relatively more attention to food quality when purchasing a product. Traceability was linked not only to food safety, but also to food quality in the mind of the consumer.

Research limitations/implications

Future research on consumer perceptions of food quality and safety will need to take account of the observation that these concepts are strongly related in consumers' minds, and therefore cannot be easily separated in explaining consumer choices.

Originality/value

Instead of investigating consumer perceptions of food quality and safety in relation to specific products, consumer perceptions of food quality and food safety in general, and how these were related to each other, were studied. Further understanding was gained of how consumers might use these concepts in judgements about food, which, in turn may influence their purchase decisions.

Purpose

The purpose of this paper is to investigate the value of information in consumer safety complaints for organizational learning.

Design/methodology/approach

Empirical analysis of this study uses a novel secondary data set, which is formed by combining complaints data filed with the National Highway Traffic Safety Administration (NHTSA) for potential safety defects, and design change information from 2003 to 2011 model-year vehicles in the USA.

Findings

First, the paper demonstrates the value of information embedded in complaints. Second, in the case of radical product redesigns, owing to the lack of direct applicability of consumer feedback based learning, the impact of learning on product safety is found to be muted, third, the results suggest that the safety complaint rates vary by vehicle classes/categories and, fourth, the findings differ from prior research conclusions on vehicle quality. Prior research finds the debuting car models have the lowest repair rates among all car models produced in a given year, but the current study finds the debuting models to have the highest rates of safety complaints.

Originality/value

Quality management literature rarely examines the safety complaints data (which, unlike other consumer feedbacks, focuses exclusively on the safety hazards due to flaws that result in accidents). This paper fills the gap in literature by linking safety complaints with future product quality and organizational learning.

Abstract

Purpose

Viewing consumer confidence as a set of static factors has informed previous research and underpinned strategies used in recovering from food safety quality failures, but this approach has not delivered reliable and quick recovery from large-scale food safety scandals. The purpose of this paper is to examine extant models and the factors they are composed of, and suggest an extended model that has a better potential for consumer confidence. The paper focuses on food products where supply chains are visible, and use these features to group the findings.

Design/methodology/approach

In this study principal components and logit analyses are used to assess the role of 30 variables operating in a consumer confidence model constructed from several existing in the literature. This combined model considers emotional, cognitive, trust and sociodemographic factors. In total, 14 independent factors are identified. The authors examine the factors, and from these, the decision-making mechanisms before and after the Sanlu Infant Milk Formula (IMF) scandal of 2008.

Findings

The authors find that the factors considered by consumers are different for different IMF supply chains, and different again before and after the scandal. The authors develop the argument for an extension to the existing models, incorporating a dynamic consumer confidence system.

Research limitations/implications

The paper uses a single survey after the focus event to establish “before” and “after” decision-making factors. Since the IMF scandal is recent and of very high profile, this is likely valid even if it carries memory bias effects. The study is directly applicable to food safety scandals in a Chinese context. Deductive reasoning extends our assertions to a wider context. They are logically validated but have not been formally tested.

Practical implications

Using this system as a framework a checklist for recovery from a similar food safety scandal is suggested. The authors also suggest more general use for use where supply chains features are visible to consumers.

Originality/value

Models for food safety consumer confidence recovery have previously focused on identifying models and the static factors they consist of. These do represent a reflection of how this phenomenon operates, but using the principals of this model nevertheless does not result in good recovery from extreme food safety failures. This paper contributes by extending these models to one that can be applied for better recovery.

Abstract

Purpose

Dairy products are an essential part of a healthy diet, and dairy is an emerging food industry in China. Meanwhile, the dairy industry is one of the “disaster zones” with quality and safety issues occurring more frequently in its supply chain than in others. Based on qualitative research focused on consumers in the Northwest and South of China, the present study aims to understand and provide information on consumer perception of food safety in dairy products.

Design/methodology/approach

Nine focus group interviews were carried out from January to April 2018. Altogether, 61 participants (24 males, 37 females, aged 18–60 years) were recruited in four cities. Qualitative content analysis of the data was conducted using Nvivo version 11.4.0.

Findings

A high concern with the safety of dairy products is widespread, particularly among participants with children, who are especially worried about the safety of dairy products. High prevalence of food safety incidents causes consumers to lower their confidence in food safety, and make them pay more attention to the news about food safety incidents. Consumers tend to become less sensitive to price, focusing more on food safety and quality, while purchasing dairy products. Brand and purchase venue are the most important indicators for consumers to determine the quality of dairy products. Safety certification becomes increasingly important.

Research limitations/implications

It has some limitations. The focus group interviews covered different two regions (Northwest and South of China). However, the number of focus groups was limited to nine because of budget constraints. The participants come from Northwest and South of the country, which means that the findings may not apply for another area of the country. A more representative sampling with a larger sample size would be necessary to increase the validity of the study. However, the results can serve as input for further research.

Originality/value

This paper explores the Chinese consumers' perception of food safety and dairy products, consumers' behaviour concerning dairy products based on focus group interviews with consumers. This study offers valuable insights to members of academia, food suppliers and policy-makers.

Abstract

Purpose

This study explains Indonesian consumers' choice of poultry meat attributes and the willingness to pay (WTP) for these attributes using a discrete choice experiment.

Design/methodology/approach

The survey was conducted for the traditional and modern channels and involved a sample of 440 respondents in the Greater Jakarta area. A discrete choice experiment was employed as the study framework and in designing the questionnaire. A multinomial logistic regression analysis was used to evaluate consumers' preference for poultry attributes in modern and traditional channels.

Findings

Consumers preferred warm poultry meat, government certification and product information labeling on poultry meat. The WTP for warm poultry meat was the highest, which is indicating that freshness is crucial for consumers to ensure quality. Moreover, consumers had more trust in government certification than private certification for food safety and were willing to pay more for product information labeling on poultry meat.

Practical implications

The government can use the model as a decision support to improve poultry meat quality at sales channels in Indonesia including to close sales channels where sick poultry are sold and thus address food safety concerns caused by the avian influenza outbreak.

Originality/value

This study shows that understanding the WTP for poultry meat attributes enables the government to control the poultry sales channels and stimulates producers to supply the market with a safer poultry meat quality using the price mechanism.

In the last four years, since Volume I of this Bibliography first appeared, there has been an explosion of literature in all the main functional areas of business. This wealth of material poses problems for the researcher in management studies — and, of course, for the librarian: uncovering what has been written in any one area is not an easy task. This volume aims to help the librarian and the researcher overcome some of the immediate problems of identification of material. It is an annotated bibliography of management, drawing on the wide variety of literature produced by MCB University Press. Over the last four years, MCB University Press has produced an extensive range of books and serial publications covering most of the established and many of the developing areas of management. This volume, in conjunction with Volume I, provides a guide to all the material published so far.

Abstract

Purpose

Since several food crises have strongly affected the production of animal food products, food safety has become one of the most important aspects of quality products for both consumers and retailers. The aim of this article is to analyse how the health crises have contributed to increasing the segmentation of the supply of fresh and little‐processed food products under the impetus of a reinforcement of regulations (affecting the supply chain as a whole) and of strategies adopted by the stakeholders.

Design/methodology/approach

The authors carry out an empirical and comparative analysis of the reactions of two neighbouring countries (Spain and France) faced with major health crises caused by similar events: the emergence of Bovine Spongiform Encephalopathy (BSE) cases. A special focus is made on the initiatives taken privately by two French retail groups (Carrefour and Auchan) operating in both countries.

Findings

The analysis shows that retailers have developed systems of quality insurance developed in order to reduce uncertainty and to restore consumers' confidence in the quality of the products they buy. These programmes of actions pave the way for policies of product differentiation. In a relatively different context from that of France, the two big French retail groups Carrefour and Auchan operating in Spain have developed similar approaches, which had not been the case in France. In a context of sharp competition between quality designation on the one hand, and the relative dissatisfaction of the retailer with respect to “minimum quality” standards on the other, the two groups have adopted marketing communication strategies adapted to the Spanish situation, and have used “supply chain brands” as tools of differentiation to ensure consumers' loyalty.

Originality/value

Provides an analysis of the effects of health crises on the segmentation of the supply of fresh food products.

Abstract

Purpose

The purpose of this research is to segment Pakistani consumers based on their insights and preference towards mango quality and safety attributes and to demographically characterise each segment so that effective value chain (VC) development strategies may be developed.

Design/methodology/approach

Factor and cluster analysis were applied to data collected from 400 mango buyers randomly selected from seven different cities in Pakistan.

Findings

This empirical study identified four distinct segments of mango consumers in Pakistan. The diversity of consumers' perception was mainly based on four factors: food safety, price and marketing, physical quality and shelf life. Based on their demographic characteristics and preferences for product attributes, the identified consumer segments can be classified as “traditional consumers,” “safety-conscious consumers,” price and market-sensitive consumers,” quality-sensitive consumersand “perfect consumers.” This knowledge is useful to develop mango VCs that target specific consumer segments based on their chain level abilities and aspirations.

Research limitations/implications

This study offers actors of mango VCs an enhanced understanding of consumer segments based on their perceived preferences towards the quality and safety attributes of mangoes, which would help VC actors design and develop business strategies that deliver value specific to each consumer segments. Findings of this study could also be useful to policy makers to design extension strategies that promote food safety and quality standards in mango VCs. Moreover, this study presents yet another case of consumer segmentation study for VC development in developing countries, adding a stepping stone towards a general VC theory development.

Originality/value

The findings stimulate the momentum of the growing literature, particularly in the developing countries on consumer insights and behaviour toward fruit quality and safety attributes of mangoes.

Abstract

Purpose

This study aims to focus on the food industry and empirically examine the mediating role of consumers’ perceived food safety on the relationship between a company’s service recovery and customer loyalty. In addition, consumers’ demographic characteristics and their influences on the relationship between perceived food safety and customer loyalty are determined.

Design/methodology/approach

A survey was carried out through a structured questionnaire which was administered to the public. Using a small intercept interview, a random sample of 836 usable questionnaires was collected in Greece. Exploratory and confirmatory factor analyses were applied to validate the proposed constructs. The causal relationships among constructs were examined using structural equation modeling.

Findings

According to the findings, consumers’ perceived food safety partially mediates the effect of a company’s service recovery on customer loyalty. The socio-demographic profile of consumers (gender, marital and parenthood status) also significantly influences the underlying factors of product and the loyalty attributes.

Practical implications

This study enriches the existing literature of food safety by examining the distinct role that consumers’ perceptions play in forming loyalty, highlighting the importance of companies’ recovery efforts. The results obtained from this analysis offer a better understanding of consumer behavior toward food safety – encouraging and supporting food companies to successfully design their marketing strategies. Food safety issues also have become increasingly important in international trade, which makes it essential to understand consumer perceptions and behavior toward food safety.

Originality/value

This study fills the identified literature gap and contributes to the literature, as no previous study has examined the proposed relationships in the food sector, taking into consideration food safety issues.
