Abstract

Purpose

Digital platforms for the provision of food information-based services (FISs) represent a consolidated business with increasing revenue streams for entrepreneurs. Such platforms have transformed and clarified the nature of uncertainty and ambiguity inherent in the traditional food sector entrepreneurial processes. Anyway, a clear understanding of the value of digital platforms for FISs is not yet consolidated in the literature. With this paper, the authors try to fill this gap through a critical literature review of scientific research that combines knowledge on food consumer's behavior and user's knowledge behavior.

Design/methodology/approach

The authors carried out a critical literature review of scientific research combining knowledge of food consumer's and food information user's behavior. This allowed the identification of the main value components of FISs.

Findings

The authors propose a multidimensional framework for modelling the value proposition of digital platforms for FISs. Three main value dimensions have been identified: relevance, credibility, and accessibility. These dimensions concur with the consumer's perceived value of consumers in terms of benefits increase and cost reduction.

Research limitations/implications

The research was intended to shed light on aspects characterizing consumers' perception of food information value. The authors put in evidence that the informational perspective of food communication is under-investigated. This study attempts to provide a holistic overview of the dimensions impacting on consumers' perception of the value of information for food consumers, opening new research perspectives.

Practical implications

The framework represents a tool for positioning food information offerings on the market, with the objective to analyze the value proposition of FISs according to a consumer perspective and to understand gaps of current offering of FISs. Moreover, it may support the design of a new generation of digital platform for food information provision, which would respond to consumers' expectations and information needs, highlighting emerging business opportunities for digital entrepreneurs.

Originality/value

Few research works provide a characterization of value proposition of digital platforms providing food information to consumers. In particular, to date, literature lacks of a holistic overview of the dimensions influencing consumer's perception of the information value of food communications.

Abstract

Purpose

Textual information about restaurants, such as online reviews and food categories, is essential for consumer purchase decisions. However, previous restaurant recommendation studies have failed to use textual information containing essential information for predicting consumer preferences effectively. This study aims to propose a novel restaurant recommendation model to effectively estimate the assessment behaviors of consumers for multiple restaurant attributes.

Design/methodology/approach

The authors collected 1,206,587 reviews from 25,369 consumers of 46,613 restaurants from Yelp.com. Using these data, the authors generated a consumer preference vector by combining consumer identity and online consumer reviews. Thereafter, the authors combined the restaurant identity and food categories to generate a restaurant information vector. Finally, the nonlinear interaction between the consumer preference and restaurant information vectors was learned by considering the restaurant attribute vector.

Findings

This study found that the proposed recommendation model exhibited excellent performance compared with state-of-the-art models, suggesting that combining various textual information on consumers and restaurants is a fundamental factor in determining consumer preference predictions.

Originality/value

To the best of the authors’ knowledge, this is the first study to develop a personalized restaurant recommendation model using textual information from real-world online restaurant platforms. This study also presents deep learning mechanisms that outperform the recommendation performance of state-of-the-art models. The results of this study can reduce the cost of exploring consumers and support effective purchasing decisions.

Abstract

Purpose

Broiler meat is the most commonly used meat product worldwide. Although China is regarded as one of the three largest broiler producers, the per capita chicken consumption remains low. Consumers' cognitive bias and the information acquisition channels are believed to be the main factors contributing to this. This paper aims to discuss the aforementioned issue.

Design/methodology/approach

To explore the phenomenon empirically, the current study uses the survey data of 1,056 consumers from China and analyses them using ordered logistic regression.

Findings

The results revealed that consumers' cognitive bias significantly affects their behaviour toward broiler products, and the order of influence is cognitive bias regarding industry cognitive > product nutrition and taste > food safety. The study further revealed that the more diverse the information acquisition channels, the more likely they are to promote consumer behaviour toward broiler chickens. The order of influence of the channels was self-organising > new media > traditional media.

Practical implications

Overall, the findings suggest that the government and enterprises should strengthen and upgrade information channels to boost both the broiler industry and consumer consumption behaviour regarding poultry products.

Originality/value

Rather than the usual focus on the impact of consumer cognition on consumer behaviour, this study examines the impact of cognitive bias on consumer behaviour. Further, centring on broiler products with high protein, low fat and feed-to-meat ratios, this study explores the reasons the per capita consumption of broiler products in China is far lower than the national average.

Abstract

Purpose

This paper aims to explore the overall research question “How can artificial intelligence (AI) influence consumer information disclosure?”. It considers how anthropomorphism of AI, personalisation and privacy concerns influence consumers’ attitudes and encourage disclosure of their private information.

Design/methodology/approach

This research draws upon the personalisation-privacy paradox (PPP) and privacy calculus theory (PCT) to address the research question and examine how AI can influence consumer information disclosure. It is proposed that anthropomorphism of AI and personalisation positively influence consumer attitudes and intentions to disclose personal information to a digital assistant, while privacy concerns negatively affect attitude and information disclosure.

Findings

This paper develops a conceptual model based on and presents seven research propositions (RPs) for future research.

Originality/value

Building upon PPP and PCT, this paper presents a view on the benefits and drawbacks of AI from a consumer perspective. This paper contributes to literature by critically reflecting upon on the question how consumer information disclosure is influenced by AI. In addition, seven RPs and future research areas are outlined in relation to privacy and consumer information disclosure in relation to AI.

Este artículo explora la pregunta general de investigación “¿Cómo puede influir la inteligencia artificial (IA) en la divulgación de información por parte de los consumidores? Se analiza cómo el antropomorfismo de la IA, la personalización y la preocupación por la privacidad influyen en la actitud de los consumidores y fomentan la revelación de su información privada.

Diseño/metodología/enfoque

Esta investigación se basa en la paradoja de la personalización y la privacidad y en la teoría del cálculo de la privacidad para abordar la pregunta de investigación y examinar cómo la IA puede influir en la revelación de información de los consumidores. Se propone que el antropomorfismo de la IA y la personalización influyen positivamente en las actitudes de los consumidores y en su intención de revelar información personal a un asistente digital, mientras que la preocupación por la privacidad afecta negativamente a la actitud y a la revelación de información.

Conclusiones

Este artículo desarrolla un modelo conceptual basado en siete propuestas de investigación para el futuro.

Originalidad

Basándose en la paradoja de la personalización y la privacidad y en la teoría del cálculo de la privacidad, este artículo presenta un punto de vista sobre los beneficios e inconvenientes de la IA desde la perspectiva del consumidor. Este artículo contribuye a la literatura al reflexionar de forma crítica sobre la cuestión de cómo influye la IA en la revelación de información del consumidor. Abstract

Purpose

This study sets out to employ a cross‐cultural perspective to explore alternative explanations in the development of the online repurchase intentions model.

Design/methodology/approach

The proposed constructs of alternative models deal with key online consumer behavior variables such as customized information, web use applications, online service and perceived interactivity which lead to the formation of purchase intentions. These variables form the theoretical foundation for four alternative models. To test these four alternative models 448 online consumers were surveyed in 2007. Structural equation modeling is used to test these models.

Findings

The results demonstrate that the power of customized information lies in its ability to influence consumer satisfaction and perceived interactivity that are proximate to repurchase intentions. The results also show that the link of satisfaction→repurchase intentions provides a meaningful empirical representation of the hierarchical sequence in which the cycle of customer repurchasing process (satisfaction→attitude→repurchase intentions) is related.

Research limitations/implications

One may examine applications of the findings in the travel industry in practice and reflect upon potential pitfalls when applying the findings of this piece of the present research. Although previous studies reveal the significance between the two constructs, further research can investigate the issue to be generalizable to the many types of e‐B2C services. Second, particularly in terms of the ability to generalize the model, the study did not provide fairly consistent results for different service categories. Studies on other service classes, such as online bookstore and online banking services, may reveal findings that extend the authors' approach.

Practical implications

Similarity of purchasing attitudes between Korean and UK consumers may allow e‐tailors to design a systematic strategy for generating favorable attitudes toward their web sites, even though standardized online treatment of consumers is not the golden path of internet marketing. Further, the proposed research model (PRM) provides a means of identifying the underlying dispositions associated with the mediating variable.

Originality/value

This is the first study to examine online repurchasing models using alternative explanations. By structuring such alternative models, McKenzie argues that researchers may be better able to judge how the evidence relates to each alternative view. The present approach can be viewed as a significant early step on the path toward a comprehensive understanding of online consumer behaviors in new information communication technology.

Abstract

Purpose

The purpose of this study is to examine the relationships between the dimensions of the pre-purchase information search (PS) such as direction (reliance on the information sources-RIS) and pattern (reliance on the utilitarian value-RUV), moderating role of the online shopping experience (OSE), and their influence on the behavior of the socialization agents (family communication (FC), peer communication (PC), TV advertising-TVAdv, social media communication (SMC)) for buying branded apparel.

Design/methodology/approach

This study used a questionnaire, and a total of 458 responses were obtained. A measurement model with the dimensions of the pre-purchase information search and socialization agents was analyzed using confirmatory factor analysis. The conceptual model with hypotheses (direct and moderated effects) was analyzed using a moderated approach using Hayes Macros.

Findings

The findings confirm the significant influence of the dimensions of the PS (RIS and RUV) on the behavior of socialization agents for buying branded apparel with the strongest influence of RIS on SMC. The moderated effects of OSE between the dimensions of PS and socialization agents are found to be significant except for the relationship between RIS and FC. The direct effects of the RIS and RUV on the socialization agents are higher for consumers having high OSE and lower for consumers having low OSE.

Originality/value

The findings contribute to the growing body of literature on the PS, highlighting the importance of consumer socialization for the purchase decision of consumers in emerging markets. No previous studies have applied a psychological approach to explain the variation in the external search incorporating the dimensions like direction (RIS) and pattern (RUV), which did not receive research attention so far. This study uniquely sets a new direction for the researchers by establishing a theoretical linkage between the dimensions of PS that can act as antecedents and can significantly influence the behavior of socialization agents using the consumer socialization approach based on the social learning theory. The results reveal the strongest influence of SMC and establish the moderating role of OSE for the buying decision of branded apparel. The findings are valuable for online marketers who must acknowledge that social media is the strongest platform for reaching customers and must create a formal page for displaying their latest updates about their products and services. Marketers must engage all the family members through online contests and feedback sessions for developing trust for online shopping platforms.

Abstract

Purpose

Hedonic social applications have been increasingly popular among health information consumers. However, it remains unclear what motivates consumers to adopt health information in hedonic applications when they have alternative choices of more formal health information sources. Building on the self-determination theory and the affordances lens, this study aims to investigate how different affordances on hedonic social applications affect consumers' basic psychological needs and further influence their intention to adopt health information on such applications.

Design/methodology/approach

As TikTok demonstrated great potential in disseminating health information, we developed a model that we analyze using the PLS-SEM technique with data collected from a valid research sample of 384 respondents with health information seeking or encountering experience in TikTok.

Findings

The results suggested that health information adoption in hedonic social applications is significantly predicted by the satisfaction of consumers' basic psychological needs, namely autonomy, relatedness and competence. Moreover, the satisfaction of basic psychological needs is positively affected by affordances provided by the hedonic social applications. The hedonic affordances positively influence autonomy satisfaction, while the connective affordances positively affect relatedness satisfaction, and the utilitarian affordances positively support competence satisfaction.

Originality/value

The study indicates that hedonic social applications such as TikTok could be an important channel for consumers to access and adopt health information. The study contributes to the literature by proposing a theoretical model that explains consumers' health information adoption and yields practical implications for designers and service providers of hedonic social applications.

Abstract

Purpose

The purpose of this study is to investigate Hispanic consumers' use of personal and impersonal information sources and to examine age and gender differences in the use of those information sources.

Design/methodology/approach

A structured questionnaire was developed to collect the data. Pillai's trace multivariate analyses of variance were used to examine the main effects of age and gender differences in the use of personal and impersonal information sources.

Findings

The degree to which personal information sources were used varied across age groups. When making a purchase decision on clothing items, the respondents' use of their mothers and friends as personal information sources differed significantly across age groups. Males and females varied in their use of their fathers, sisters, and other female family members as personal information sources. The degree to which impersonal information sources were used also varied across age groups. When gathering ideas about what clothing items to purchase, the use of fashion magazines as impersonal information sources differed significantly across age groups. In addition, males and females varied in their use of store displays and television advertisements as impersonal information sources.

Research limitations/implications

The study may provide guidance in developing effective and strategic promotion direction and in selecting proper media advertising in an effort to target Hispanic consumers in the USA. Marketers can use this information to determine advertising media allocation in effectively reaching Hispanic consumers.

Originality/value

Considering the unprecedented growth in the population and the purchasing power of Hispanics, marketers need to analyze Hispanic consumers' use of information sources in their shopping behaviors in order to determine effective marketing and media planning. However, little is known about how Hispanic consumers' use of information influences their shopping behaviors. This study offers insights for apparel retailers in building effective promotional strategies for reaching Hispanic consumers.

Abstract

Consumers are becoming increasingly concerned about the privacy of their personal information and information about their purchase behaviors. The current study examines the extent to which consumers are concerned with how their personal information is collected and used, their awareness and knowledge of data collection practices using discount (loyalty) cards, the relationship between demographics and privacy concerns, and the relationship between privacy concerns and purchase behaviors. Results from a telephone survey of 480 consumers suggest that even though consumers are concerned about how personal information is collected and used, very few consumers are aware of how discount (loyalty) cards are used to collect personal level purchase data. Results also suggest that concerns about the use of personal information vary by demographic market segments, and that privacy concerns are significantly related to consumers’ purchasing behaviors on the Internet.
