Abstract

Purpose

The purpose of this paper is to develop a comprehensive eating screening inventory named the Sensory Processing, Aberrant Mealtime Behaviors, Motor, Inventory for Eating (SAMIE). The SAMIE will accurately screen nutritional risk by identifying the four primary domains that affect eating in children with autism spectrum disorder (ASD).

Design/methodology/approach

The development of the questions was executed in three steps. First, a review of the literature was conducted. Second, expert opinion was acquired which was critical in developing the questions. Third, ten think-aloud protocols were set up to simplify the first draft. Prior to the pilot study, four participants were recruited to complete the SAMIE online.

Findings

A total of 162 participants completed the online demographic questionnaire and the SAMIE. Overall, participants did not differ between groups for demographic characteristics, BMI status and dietary intake. After conducting a series of statistical tests, results illustrated that the SAMIE is a valid measure to screen nutritional risk in children with ASD.

Practical implications

Due to the complexities of problematic eating behaviors in ASD, there is a need for a comprehensive screening inventory that encompasses the four domains that impact eating in an ASD. These domains have been identified as, namely, aberrant mealtime behavior, eating skills, dietary intake, and sensory processing and have yet to be utilized collectively to screen for nutritional risk in children with ASD.

Originality/value

The SAMIE is a novel eating screening inventory that will standardize the methodology for screening nutritional risk that can be used in clinical, community and research settings.

Abstract

Purpose

Eating away from home frequency is increasing and is linked with numerous adverse health outcomes. The purpose of this paper is to inform the development of health promotion materials for improving eating away from home behaviors by elucidating related parent and child cognitions.

Design/methodology/approach

Parents (n=37) and children (n=35; ages 6–11 years) participated in focus group discussions, based on social cognitive theory. Data were content analyzed to detect themes.

Findings

Many parents were concerned about what children ate away from home, however, others were less concerned because these occasions were infrequent. Lack of time and busy schedules were the most common barriers to eating fewer meals away from home. The greatest barrier to ensuring children ate healthfully away from home was parents were not present to monitor children’s intake. To overcome this, parents supervised what kids packed for lunch, provided caregivers instruction on foods to provide, and taught kids to make healthy choices. Kids understood that frequently eating away from home resulted in less healthful behaviors. Barriers for kids to eat healthy when away from home were tempting foods and eating in places with easy access to less healthy food. Kids reported they could take responsibility by requesting healthy foods and asking parents to help them eat healthfully away from home by providing healthy options and guidance.

Originality/value

This study is one of the first to qualitatively analyze parent and child eating away from home cognitions. It provides insights for tailoring nutrition education interventions to be more responsive to these audiences’ needs.

Abstract

Purpose

Social, physical and temporal characteristics are known to influence the eating experience and the effectiveness of nutritional policies. As the school meal service features prominently in UK nutritional and health promotion policy, the paper's aim is to investigate the characteristics of the primary school dining context and their implications for eating behaviours.

Design/methodology/approach

A case study of one local authority in Wales was conducted involving 11 primary schools stratified into socio‐economic quartiles. Focussed observations were carried out over two to three lunchtimes per school to explore their social, physical and temporal characteristics. These were supplemented by semi‐structured interviews with catering staff and midday supervisors.

Findings

The dining halls had numerous generic attributes (e.g. accommodation, equipment, length of lunchtime, social actors). These interacted to have a direct, but not necessarily positive, bearing on food choice and consumption. Overcrowded, multi‐purpose dining halls coupled with time pressures and dynamic social situations detracted from the eating experience and the ability of staff to encourage children to eat.

Practical implications

Without addressing these underlying issues, school nutritional policy may only play a limited role in influencing what children eat. It is recommended that policy places a greater emphasis on factors such as the eating environment; the time available for eating; and the role of the midday supervisor.

Originality/value

Previous studies of dining halls have generally been part of process evaluations of nutritional interventions. This study adds value by conducting a focussed investigation into the relationship between the dining hall environment and eating behaviours.

Abstract

Purpose

The purpose of this paper is to examine the behaviors and social interactions among preschool children and their teachers during food consumption at a daycare facility. Using social cognitive theory, the goal is to identify how role modeling, rules, behaviors and communication shape these young consumers’ health-related food consumption and habits.

Design/methodology/approach

This study was conducted in a US daycare facility among preschool children (aged four years) over a three-month period. Qualitative ethnographic methods included participant and non-participant observation of meals and snack-time.

Findings

Findings from the observations revealed that teachers’ food socialization styles and social interactions with peers cultivate children’s food consumption. In addition, commensality rules set by the childcare institution also help children learn other valuable behaviors (e.g. table manners and cleaning up).

Research limitations/implications

The study was conducted in one location with one age group so the results may not be generalized to all children. As more young children spend time in preschools and daycare centers, the understanding of how these settings and the caregivers and peers influence them becomes more important. Preschool teachers can influence their young students’ food consumption through their actions and words. Training teachers and cultivating educational programs about ways to encourage healthy eating habits could be implemented.

Originality/value

The paper offers observations of actual behaviors among young children in a naturalistic setting.

Abstract

Purpose

Healthy‐eating socialization is often described as a bi‐directional process, but there are only few studies on children and parent's roles in the process. This paper aims to investigate children and parents' accounts of awareness and involvement in healthy eating and how they relate it to their roles in healthy‐eating socialization.

Design/methodology/approach

Semi‐structured interviews were conducted with 38 families three months after a healthy‐eating intervention involving dietary advice and SMS feedback. The interviews were analysed by means of qualitative content analysis.

Findings

Children and parents identified several causes of awareness and involvement in healthy eating: new or re‐activated health knowledge, visualization of amounts, self‐regulation and planning. Children adopted two strategies in terms of family socialization: a direct strategy placing demands on parents or a cooperative strategy helping the parents. Parents initiated dialogues with family members about healthy eating and felt responsible as role models often honouring the children's demands and help.

Research limitations/implications

Findings provide a concrete empirical account of the socialization process and confirm that parents still have the superior hand, when it comes to healthy eating, but with children as active players. The authors suggest future studies to explore the development of influence and awareness of healthy eating among children and the extent to which children wish to engage in healthy‐eating socialization.

Originality/value

The study supplements previous research by including children's immediate family as a unit of analysis. By taking an intra‐familiar systemic approach to studying family socialization, future studies can take into account the family support (or lack hereof), when designing interventions and evaluating the outcomes.

Abstract

Purpose

Parental feeding practice (PFP) plays an important role in child’s eating behavior and weight status, but less information is available about its role in the Thai family setting. The purpose of this paper is to examine the influence of PFP on child’s gender and body mass index (BMI).

Design/methodology/approach

Participants included 227 parents-child dyads from the suburban area of Nakhon Pathom province, Thailand. Children aged 9-12 years and parents who were either child’s mother, father or grandfather/grandmother were enrolled in the study. Body weight, height, waist circumference and body fat were measured in all children. Eating behavior of each child was assessed by using child’s eating questionnaire. Parents also provided their feeding practices in child feeding questionnaires. Information on household food security was also obtained from children’s parents.

Findings

There was significant difference in eating behaviors and home environment between child’s genders. For child’s eating behavior, mean total eating scores of girls were significantly greater (p=0.002) than that of boys and that the inappropriate home environment was more found in families of boys than girls. Regarding feeding practice, parents used more food restriction (p=0.008) and monitoring on child’s eating (p=0.042) in girls than boys. Parents put more pressure to eat on the normal weight than obese children (p=0.001). Regression analysis revealed that, apart from parental BMI and household income, PFPs have a significant impact (15.6 percent explained variance) on child’s BMI.

Originality/value

This study highlights the importance of being aware of child’s gender and weight status when feeding practices were provided to them. Nutrition education for parents should take account for parents’ perceptions and concerns as well as the modification of feeding practices to improve children’s eating behaviors.

Abstract

Purpose

Children's eating habits are influenced by numerous social and individual factors. The present study aimed to evaluate the connection between nutrition knowledge of children and their eating habits as well as their attitudes towards healthy eating habits.

Design/methodology/approach

The research study included 630 11-year-old children from 27 randomly selected Slovenian schools. During the research, children attended the sixth grade of the nine-year elementary school and on average were subject to 38.6 h of mandatory nutritional contents, which are planned in the curriculum of home economics. At the end of the school year, nutrition knowledge was checked with a knowledge test consisting of 27 questions. Considering the achieved results, children were classified into three knowledge categories: low, fairly good, and good nutrition knowledge. Children's eating habits were assessed with a food-frequency questionnaire, while the five-degree Likert scale was used to assess their attitudes to healthy eating habits. Differences in children's eating habits and attitudes in reference to the category of knowledge were determined through analysis of variance.

Findings

The results demonstrated that children with better nutrition knowledge have healthier eating habits and a more positive attitude towards them than children with poor nutrition knowledge.

Originality/value

The study results demonstrate the link between children's nutrition knowledge and attitudes on the one hand and eating habits on the other which justifies the importance of providing formal and informal nutrition education to children.

Purpose

The purpose of this study is to evaluate the relationship between sleep disturbances, gastrointestinal (GI) problems and eating behaviors in children who are diagnosed with autistic disorder (AD) and pervasive developmental disorder not otherwise specified (PDD-NOS).

Design/methodology/approach

This study was conducted with 102 children who were diagnosed with autism spectrum disorder (ASD). Sleeping and GI (abdominal pain, constipation, diarrhea, vomiting, difficulty swallowing) problems in children were obtained by asking their parents using a questionnaire. The feeding assessment survey (FAS), brief autism mealtime behavior inventory (BAMBI) and food consumption frequency were used to obtain information about the children’s eating habits.

Findings

The BAMBI total score, food refusal and features of autism subscale scores of those with AD were higher than those in the PDD-NOS group (p < 0.05). Sleeping, GI and eating problems are seen in those with AD more commonly than in those diagnosed with PDD-NOS.

Originality/value

To the knowledge, this is the first study that compares GI, sleeping and eating problems in children with AD and PDD-NOS. Sleeping, GI and eating problems may be more frequent in children with AD than in those with PDD-NOS. The GI problem rate is higher in children with autism with sleeping problems than without sleeping problems.

Abstract

Purpose

The purpose of this paper is to explore primary school children’s beliefs towards eating fruit and vegetables in a deprived area in England.

Design/methodology/approach

Semi-structured interviews were conducted with 11 children aged 9-11 from an after school club at a primary school in a deprived area in the West Midlands. Interviews were analysed using inductive thematic analysis.

Findings

Six master themes emerged from the data: “effect on the senses”, “feelings about food”, “healthy vs unhealthy foods”, “effects on health”, “convenience” and “family and friends”. Analysis showed that children seemed to have a very good awareness of the health benefits of eating fruit and vegetables. However, negative beliefs were associated with sensory perceptions (such as taste, texture, appearance and aroma), availability, and the competing desirability of other, unhealthy foods. Also, although parents were key influences, siblings and friends were often perceived as negative influences and would tease children about eating fruit and vegetables.

Practical implications

Suggestions for interventions include increasing the appeal and availability of pre-prepared fruits and vegetables in both home and school environments. Additionally, an approach to eating more fruit and vegetables which focusses on siblings and friends is advocated as these groups appear to play a key role in terms of promoting the consumption of these foods.

Originality/value

This study is novel as it uses individual interviews to explore primary school children’s attitudes towards fruit and vegetable consumption in a deprived area in England. By focussing on the specific behaviours of fruit and vegetable consumption, the findings aid the development of interventions that are designed to improve children’s healthy eating behaviour.

Abstract

Purpose

The purpose of this paper is to present a case study of the research steps taken to identify message directions for a community-wide health communication campaign aimed at supporting healthier eating behaviors among Latino farmworker families in the Immokalee community in Florida. Latino mothers were targeted to understand their beliefs about children’s healthy eating needs and identify communication campaign opportunities that would reinforce choices made in the home, surrounding meal planning, food selection and preparation and portion sizes.

Design/methodology/approach

A sequential mixed-methods approach using focus group, group interview and qualitative message concept testing was used in three distinct stages of research exploration. An independent sample was recruited at each stage through convenience sampling and snowball sampling methods. The stages of change theory provided a framework for research inquiry in the context of healthy eating-at-home practices.

Findings

In general, mothers were aware and participatory in the effort to serve healthy meals for their children at home. The time and money associated with buying nutritious foods and cooking healthy meals daily was stressful, but they were receptive to communication efforts to help them maintain their commitment to give their children healthy foods. These findings provided directional opportunities for the discovery and implementation of health communication strategies. Test results found that the target was most receptive to message strategies that acknowledged the responsibility of both parents to model healthy eating practices to children.

Research limitations/implications

Recruiting resulted in small sample sizes at each stage of the investigation. The reliability of quantitative measurement was a limitation to the research conclusions.

Practical implications

Partnership with the audience from discovery to conceptualization resulted in messages that uniquely resonated with the audience for which they were aimed. Understanding about the target stage of readiness improves message effectiveness to the target group.

Social implications

Health communication campaigns planned and developed with the target audience at its center will generate message strategies that effectively address issues of greatest relevance to those communication agents that seek to change.

Originality/value

The study provides a unique exploration of the steps that health communication agents should pursue to establish a thorough profile of their target audience and the issues that resonate when considering healthy eating behavior at home. The application of the stages of the change model encouraged the discovery of issues surrounding the challenge and highlighted potential obstacles that would mitigate the behavior change efforts.
