This paper aims to investigate participants’ motivations and perceptions of a field trip. Specifically, this paper examines if and how students’ perceptions change with time and it explores the main factors for ensuring success in an experiential learning tourism program.
The study gathered and compared data collected in two points in time – immediately at the end of the experience and two months afterward. T-tests for paired samples were used to examine potential differences in perceptions and principal component analysis was used to identify the key factors determining the success of the experience.
The findings indicate that there are various motivations behind participation and that time barely affects perceptions of the experience. Furthermore, three factors emerged as important for meeting expectations, namely, social and professional connections, learning and traditional yet engaging teaching.
While the outcomes are useful, they need to be thoughtfully applied because of the small data set. It is important to repeat similar investigations to allow more certainty in the propositions formulated. Furthermore, future studies should evaluate a broader variety of outcomes to determine whether perceptions remain constant. The implications are that educators and destination managers can easily apply these conclusions for the benefit and the findings can inform other field trips and broader experiential initiatives.
Despite research on learning outcomes and perceptions of experiential learning having expanded considerably, a fundamental question that remains unanswered is how perceptions of such experiences change and, consequently, when the most appropriate time is to assess participant perceptions.

研究结果表明, 参加体验式研学旅行的人们有着不同的动机, 时间基本不影响参与者对研学体验的认知。此外, 三个因素显得十分重要：社交和专业联系、学习、传统的参与式教学。

Turismo educativo y aprendizaje experimental: percepciones de los estudiantes sobre las excursiones
El propósito de este estudio es investigar las motivaciones y percepciones de un viaje de campo. Específicamente, en este articulo se examina si las percepciones de los estudiantes cambian con el tiempo y se determinan los principales factores para asegurar el éxito de un programa de aprendizaje experimental de turismo.
El estudio reunió y comparó datos recopilados en dos puntos en el tiempo – directamente después de la experiencia y dos meses después. Se aplico la prueba “t” para muestras emparejadas para examinar las posibles diferencias en las percepciones y se utilizó el análisis de componentes principales para identificar los factores clave que determinan el éxito de la experiencia.
los resultados indican que hay varias motivaciones detrás de la participación y que el tiempo prácticamente no afecta las percepciones de la experiencia. Además, tres factores surgieron como fundamentales para cumplir con las expectativas de los estudiantes: conexiones sociales y profesionales, aprendizaje y enseñanza tradicional pero dinámica.
Limitaciones/implicaciones de la investigación
Si bien los resultados son útiles, deben aplicarse cuidadosamente debido al pequeño conjunto de datos. Es importante repetir investigaciones similares para permitir mayor certeza en las proposiciones formuladas. Además, los estudios futuros deberían evaluar una variedad más amplia de resultados para determinar si las percepciones permanecen constantes. Las implicaciones son que los educadores y los gerentes de destino pueden aplicar fácilmente estas conclusiones para beneficio y los hallazgos pueden informar otras excursiones e iniciativas experimentales más amplias.
Si bien la investigación sobre percepciones del aprendizaje experimental se ha ampliado considerablemente, una pregunta fundamental que queda sin respuesta es cómo cambian las percepciones de tales experiencias y, en consecuencia, cuándo es el momento más apropiado para evaluar las percepciones de los participantes.

While sustainability issues in the tourism industry have been the subject of substantial research, such issues have not been well discussed in the field of events which is increasingly supporting tourism plans. The environmental sustainability of events in particular has not been thoroughly addressed, and sustainable tourism accreditation schemes have generally omitted events from their scope. Green Globe, an environmental accreditation scheme for tourism, suggests 25 different types of schemes to benchmark different sectors of the industry but fails to directly address events. This chapter evaluates the adaptability of Green Globe's environmental accreditation scheme to the event sector. Eight different indicators can be applied to special events. Six are suitable for events in their current state while two others require some adjustment.

Cookery has been identified as an occupation with skills shortages, at least in the developed world. There is currently a dearth of research into the cookery labour market, its occupational culture and characteristics. This paper seeks to address this issue.
The study utilised a tracking approach to collate and investigate aspects of electronically‐listed job advertisements for cookery‐related vacancies in Australia's northern state of Queensland. Content analysis of advertised employment vacancies has previously been utilised as a method in tourism and hospitality research.
The findings support the proposition that industry demand exceeds labour supply. Moreover, the content analysis of the vacancies' characteristics suggest that a range of job advertisement details, including remuneration, is infrequently supplied.
The study was limited in scope to cookery‐related vacancies and to those advertised for Queensland. Accounting for vacancy duplications and consequential vacancies were the two key analytical challenges. Future research with refined instruments and more generalisable samples is invited.
The study reveals that the increased electronicisation of information facilitates both the collection and generation of labour market research.

This research paper aims to report on the findings of an innovative study to extract contemporaneous interpretations of Australian colonial domestic hospitality in Mrs. Lance Rawson's Cookery Book and Household Hints.
To dialogue with the text's original author, as free of time and space permutations as possible a hermeneutical approach is adopted. Hermeneutics has been successfully applied as an interpretative tool, to a range of tradition laden significant texts as it assists in the (constructive) deconstruction of texts so that the reader may use them as a portal into the past (its values and assumptions).
The findings of these textual analyses present a number of themes: the embedded notion of host/guest relations, especially as it transpires in “the bush”; the earliest impacts of indigenous and ethnic minorities on food production, its consumption and hence private hospitality; and evidence of a range of issues concerned with the management of a household. An Australian hospitality is also explored.
Just as researchers have sought to identify an antipodean cuisine, this paper is a launch for understanding the origins of colonial hospitality, albeit from a private perspective.
The findings might assist the Australian hospitality industry in developing a regional service culture.

The purpose of this paper is to examine why people visit multicultural festivals, with the overall aim being to better understand the apparent popularity of multicultural festivals. The paper aims to provide key stakeholders with a platform upon which to better manage and improve multicultural festivals as tourism attractions.
An on‐site questionnaire survey was administered at one of the multicultural festivals in South Korea in 2010. The reasons for visit were measured using a scale based on existing benefit scales, and literature related to multiculturalism. In total, 17 items were analyzed as visitor reasons for their visit. Demographic questions included age, nationality, the reason for living in South Korea if not a Korean, and gender. Out of 203 collected questionnaires, 183 were considered usable.
In total, five factors were identified as the reasons for attending a multicultural festival – family togetherness, escape, cultural exploration, socialization, and curiosity. The cultural exploration proved to be the most common reason for attending a multicultural festival for visitors.
The findings of this study will help all key stakeholders to more fully understand what visitors want, and guide festival management to organize sustainable festivals as a niche tourism attraction. Due to the desire for cultural exploration, festivals should offer multicultural themed activities. Sport competitions can be good for socialization between migrants and South Koreans, or migrants themselves.
Although multicultural festivals are held in many countries, there appears to be little research into the multicultural festivals in a country like South Korea, in transit from being ethnically homogeneous to becoming a multicultural society. This chapter presents an innovative learning opportunity for tourism students, International Tourism and Hospitality Academy at Sea, that has been in operation for the last 10 years. The program could render itself as a case study of Kolb’s experiential learning theory according to which knowledge is created by transforming experience. Its uniqueness and complexity lie in its diversity. This program has involved between 80 and 130 tourism students yearly from four to six institutions from different countries participating in new scholarly inputs by non-resident professors and instructors.

For the islands of the Caribbean, tourism is more than an industry to be managed. Significantly, it is a socioeconomic phenomenon that if managed effectively can address some of the challenges facing the region. Tourism higher education plays a critical role in preparing graduates to shape an improved Caribbean tourism society and in performing research. Over the years, its tourism education has been framed by “Western models” that have not taken sufficient account of the Caribbean reality. The focus of this chapter is to define Caribbean education and to propose a tourism higher education strategy for the implementation in part of this education.

This chapter offers an experience-based report about the development of the first Scandinavian PhD program in tourism studies at Mid-Sweden University. This process is documented through a framework which, rather than having the coherence of a single clearly bounded discipline, focuses on tourism as a study area encompassing multiple disciplines. Tourism knowledge is derived through a synthesis of fact-oriented positivist methodologies and critical theory. The theoretical framework employed to develop the graduate program in tourism studies is presented by critically discussing its multidisciplinary base and briefly outlining future veins of further development.
