Abstract

Purpose

This study aims to describe South African consumers’ wine risk perception on varietal level with recommendations for Chenin blanc.

Design/methodology/approach

An exploratory mixed methods approach was followed where qualitative data were used to develop the questionnaire. Quantitative data were collected from 2,051 respondents using an online survey. ANOVA and Fischer least significance difference tests were used to indicate statistical significance.

Findings

Significant perceived risks (PRs) associated with Chenin blanc across age and ethnic groups were functional, time and financial risks. Risk-reducing strategies (RRS) in the white wine category were favourite brands and a trusted store, while Sauvignon blanc was also described as an RRS. Recommended Chenin blanc RRS include tastings and events with food.

Research limitations/implications

Measurement of PR remains challenging. This research approach can be reproduced and/or adapted to investigate other struggling varietals and/or regions-of-origin. The convenience sample limits generalisability.

Practical implications

Segments were identified to develop new markets for Chenin blanc. RRS emphasise the importance of real sensory experience rather than media exposure to build knowledge and familiarity.

Originality/value

This study is a pioneering endeavour in terms of using an exploratory mixed methods research approach to investigate and describe risk perception of a specific wine varietal. Recommendations, with implications for strategic marketing decisions, are made for South African Chenin blanc.

Abstract

There is substantial anecdotal evidence that, whilst popular in current international consumer markets, the grape variety sauvignon blanc is viewed ambivalently by some wine industry professionals. This study examines evidence for that anecdotal perspective. It reports first the findings from a qualitative research project that provided some support for the proposition that wine industry attitudes to the grape variety are ambivalent. Further qualitative research, involving semi‐structured interviews, was then carried out to examine precisely why that ambivalence exists, and to explore in depth the perspectives of Australian wine industry professionals towards sauvignon blanc. The findings suggested both physiological and social reasons for this dislike. The study has relevance in two areas. The first is in the development of a theoretical understanding of how those who are responsible for the production of aesthetic products may approach working with material that they may dislike, or have little regard for. The second is more practical, and informs how those marketing sauvignon blanc should view the product.

Abstract

Purpose

The purpose of this case study is to explore how a relatively economically insignificant business can gain and maintain access to a major supermarket chain on the other side of the globe in a world oversupplied with fine wines.

Design/methodology/approach

Based on the approach to case studies recommended by Lyons (2005), this case study is built on semi‐structured interviews with key informants, previous experience, observations, documentary and web resources, combined in a process of triangulation to ensure reliability and content validity.

Findings

The nature of the problems facing a small wine producer are described, followed by an account of how access to Tesco was achieved and maintained. Personnel with previous Tesco contact were found to be vital to gaining access. Providing exactly what the supermarket wanted, when it wanted it and with reliability to continue supply over time were found to be critical as was the role of the channel coordinator. Supplier/supermarket loyalty was able to survive opposition. Maintaining good relationships in the supply chain was supported at all levels by active participation of the supplier's principals, in all stages of the chain, both personally and in developing solutions to the supermarket's problems.

Originality/value

The case study describes the first successful export of wine from New Zealand to Britain for sale in Bag‐in‐Box containers and how this is far more efficient in “food miles”.

Abstract

This article focuses on the efforts of wine journalists to disseminate information. A content analysis is undertaken of articles in specialist wine magazines and weekend newspapers. This analysis is in the form of a comparative study based on the wine information for the three southern hemisphere countries of Australia, South Africa and New Zealand. When amount of column space devoted to each is assessed, it is evident that New Zealand, the smallest wine producing country of the three, is more positively favoured receiving a disproportionate amount of attention. However, an analysis of the information disseminated questions the value of the reviews.

Abstract

Argues that lack of knowledge of Czechoslovakian wines in the international marketplace represents an opportunity to develop an identity based on quality, premium wines from the most promising districts of Moravia and Slovakia. Czechoslovakia is also seen as a nation which already employs reductive Western‐style wine making. Suggests that this provides a robust base from which such a reputation can be developed. Recognizes, however, that there are a number of problems common to most of the former COMECON wine producers, and that many Eastern European wine makers continue to face something of a “Catch 22” situation.

Abstract

Purpose

The purpose of this paper is to determine the degree to which wine consumers in South Australia have different liking for white wine styles, and to relate reported liking to wine knowledge and demographic differences.

Design/methodology/approach

A group of 150 regular white wine drinking consumers from the Adelaide metropolitan area responded to a wine habits and attitudes questionnaire. Consumers were segmented based on self‐reported liking of white wine styles, with three distinct segments identified.

Findings

Sauvignon Blanc wine likers were mainly younger females with low wine knowledge who reported not drinking Chardonnay wines. Conversely, “Riesling wine likers” were generally older with higher wine knowledge. These consumers were interested in the region, vintage and alcohol level when purchasing white wine. The final group (40 percent of the total sample) had a lower liking for Riesling wines, but liked all types relatively highly, had low to moderate wine knowledge and took more note of expert opinion than the other clusters.

Research limitations/implications

The findings of this study can be extrapolated to the South Australian population, however, the sample size may restrict the generalisation of the results to the broader Australian population.

Originality/value

The results of this study provide initial insights into the behaviour of white wine consumers and highlight the importance of wine knowledge in differentiating consumer liking. Some strategies for influencing consumers' preference are suggested.

Abstract

Purpose

The purpose of this paper is to explore the fragile link between a medium sized New Zealand wine business and a major overseas supermarket chain, and how a smaller business can survive market disappointments such as reduced supply contracts.

Design/methodology/approach

This case study is built on semi‐structured interviews with key informants, previous experiences, observations, documentary and web resources, combined in a process of triangulation to optimize reliability and content validity.

Findings

Establishing a successful long distance supply chain for a New Zealand wine does not guarantee long term business success. When that success was threatened by the supermarket reducing its order unilaterally the company concerned responded by restructuring its business operations to overcome a performance gap. A further chain has been developed to another UK based supermarket chain, ASDA, to move bulk wine and significant inroads have been made into the US market place through Total Wine & More, a US distributor/retailer. Long term relationships played key parts in all these developments. Establishing and maintaining customer contact and loyalty through regular interpersonal contact and close monitoring of the supply situation has had a central role.

Research limitations/implications

This is only a single case of a Canterbury, New Zealand, enterprise, but it corroborates Beverland and Lindgreen's research, which examined the evolving patterns of relationships over time among New Zealand wineries, importers, retailers and customers.

Practical implications

This paper highlights the value of investing in and maintaining long term business relationships.

Originality/value

Previous articles have described the establishment of the original chain with Tesco. This one reviews how that chain has been rescued and other chains developed as part of a strategy of not “having all one's eggs in one basket”. The major innovation for this exporter has been gaining satisfactory access to the US market. Together with his UK chains this now provides assured markets for the majority of his production of Marlborough Sauvignon Blanc, by far the most important New Zealand varietal wine produced.

Purpose

The purpose of this paper is to outline Tim Hanni’s vinotype theory and to test some of the theories foundational propositions. Specifically, this paper tests whether the wine preferences of novice wine consumers can be predicted using novice consumers’ historic and current food and beverage consumption patterns and preferences.

Design/methodology/approach

The sample consists of college students at a large Midwest University in the USA with an average age of 21.5 years. Data are collected via focus group (n = 4), a web-based survey (n = 231) and via recorded hedonic responses to food and wines in a controlled lab setting (n = 75). Correlation, regression and factor analyses are performed.

Findings

The findings support the vinotype theory. Predicted order and structure was found and near-past consumer consumption patterns and preferences predicted the consumer wine preferences of novice wine consumers.

Research limitations/implications

The use of a convenience sample of college-student wine drinkers from a single university in Midwestern USA limits the paper. While the paper provides support for the vinotype theory, the results are not generalizable to other countries, regions or populations with a different wine-consumption culture. Additional research is necessary to further test and validate the vinotype theory and model.

Practical implications

The support for the foundational propositions of the vinotype theory suggests that it is reasonable to consider adopting the vinotypic approach. Businesses that sell wine can have their sales and service staff use the vinotypic approach to assist consumers in selecting wines the consumer will find delicious. This should lead to customer satisfaction and possible repeat sales/visits. Consumers can use the vinotype theory to develop an understanding of which wines they like and the reason for liking such. Researchers should use this foundational support to test the model outright.

Originality/value

This is a first academic review of the vinotype theory and a first test of the theory’s foundational propositions independent of the theory’s author. This paper is important, as it provides some independent support for the vinotype theory. The vinotype theory provides a basis for increased understanding and clarity in the realm of wine choice and preference.

Abstract

Purpose

This study aims to understand the degree of predictability and value in analyzing consumer purchase patterns in the US wine retail market. The study considers whether brands in US wine retailing follow the well-established Duplication of Purchase Law and Double Jeopardy Law.

Design/methodology/approach

Over 20,000 customer panel wine purchases were analyzed from a number of locations within a supermarket chain based on the West Coast of the USA. Cross-purchasing behavior for the top 20 wine brands by market penetration was analyzed to assess whether the well-established Duplication of Purchase Law and Double Jeopardy Law hold up in this wine retail setting in the USA. The degree of predictability and the existence of anomalies in expected cross-purchasing behavior were identified in the analysis.

Findings

Results confirmed a Double Jeopardy pattern and that wine cross-purchasing patterns for the most part followed the Duplication of Purchase Law. However, exceptions to these patterns were found, which indicated areas in need of managerial attention due to the potential to remedy, develop or monitor the most prominent variations between predicted and realized cross-purchasing behavior. Repeated identification of variations has been identified in other product categories, known as market partitions.

Originality/value

Although it is commonly believed that wine is a unique product category, the results of this study demonstrate that consumer behavior toward wine is similar to other fast-moving consumer goods. The exceptions suggest that while similar consumer purchase patterns are evident, consumers are more likely to cross purchase wine brands and grape types more than would be expected given Duplication of Purchase Law benchmarks.

Abstract

Purpose

Methods to assess the authenticity and traceability of wines have been extensively studied as enhancers of food quality, allowing producers to obtain market recognition and premium prices. Among analytical techniques, the volatilome profile attained by gas chromatography coupled with mass spectrometry is acquiring more and more attention by the scientific community, together with the use of chemometrics

Design/methodology/approach

The volatilome profile of three varieties of blanc wines from the Collio area (namely Ribolla Gialla, Malvasia and Friulano) between Italy and Slovenia, was determined by head space-solid phase micro extraction-gas chromatography-mass spectrometry, enhancing the carbonyl compounds identification with O-(2, 3, 4, 5, 6-pentafluorobenzyl)-hydroxylamine with the aim of identifying the autochthonous Friulano variety.

Findings

A two-step chemometric approach based on an unsupervised technique (PCA) followed by a supervised one (PLS-DA) allowed to identify possible markers for discriminating the Friulano Collio variety from the others, in particular two chemical classes were identified by PCA (ketones and long chain esters). PLS-DA showed 87% accuracy in classification. A correct classification (i.e. non-Friulano Collio) of a group of wines obtained from the same grape variety but produced in an extra-Collio area was obtained as well. The results confirmed the benefits of using a derivatization step prior to volatile organic compounds analysis.

Research limitations/implications

Among methods to assess the authenticity and traceability of wines, volatilome profile of wines determined by head space-solid phase micro extraction-gas chromatography-mass spectrometry, enhanced by the carbonyl compound identifications with O-(2, 3, 4, 5, 6-pentafluorobenzyl)-hydroxylamine, may have a key role in conjunction with chemometrics and, in particular with principal component analysis and partial least square discriminant analysis.

Practical implications

Among methods to assess the authenticity and traceability of Friulano wine, volatilome profile of wines determined by head space-solid phase micro extraction-gas chromatography-mass spectrometry, enhanced by the carbonyl compound identifications with O-(2, 3, 4, 5, 6-Pentafluorobenzyl)Hydroxylamine hydrochloride, may have a key role in conjunction with chemometrics.

Originality/value

Few works investigated both wine traceability with a volatilome enhancer and chemometrics of the Friulano wine variety obtaining such an improvement in this wine variety discrimination.
