Abstract

Purpose

This paper aims to understand the significant farm and market-level factors that incentivize the adoption and marketing of pulses influencing its supply response to changing demand.

Design/methodology/approach

The authors first use a modified Nerlovian supply response model using secondary data to identify the major price and non-price factors influencing the supply of pigeon pea, black and green gram in the major pulses growing states in India. Second, using primary qualitative data the authors map the pulses value chain from farm to retail to identify the how proportional and fixed transaction costs (FCTs) influence market participation of pulses growers and limit the transmission of price and quality information.

Findings

The supply response model shows some positive influence of price on area allocation for pigeon pea and black gram and some negative effects of yield and price increase of competing crops on pigeon pea acreage. However, for the most part, the area of Kharif pulses is inelastic to prices in the long run. Irrigation, rainfall and yields in the lag year are shown to have a significant influence on area allocation for pulses. The market study reveals that low yields, low landholding size and geographical disadvantages of high agro-climatic risk and poor connectivity hinder market access of pulses farmers relative to other crops. Market power in favor of buyers and poor price and quality information is a disadvantage to sellers, influencing their ability to participate in markets.

Research limitations/implications

A quantitative study would be required to identify the magnitude of farm and market-level transaction costs.

Originality/value

This study helps to understand the supply response of pulses and gives suggestions to direct policy to rectify this.

Abstract

Purpose

The purpose of this paper was to analyse the present status of the information available on rice bean [Vigna umbellata (Thunb.)] cultivars with respect to its nutritional and functional characteristics. It is one of the non-conventional and under-utilized beans of South and Southeast Asia. In northeastern regions of India, it is an important crop for shifting cultivation or kitchen garden which is consumed as vegetable (tender pod) and pulse. The information gaps filling could be useful for several work proposals and for consumers and cultivators to know the nutritional strength and varied usability of the grain which in-turn can help in its commercialization.

Design/methodology/approach

The approach to information collection was emphasized on nutritional strength of the grain compared to other beans of Vigna family and the varied usability among the rice bean varieties of the Himalayan Belt.

Findings

The average carbohydrate, protein, fat, crude fibre and ash content of 75 genotypes of rice bean was found 59.96 ± 2.81, 20.78 ± 2.65, 1.74 ± 1.42, 5.07 ± 1.17 and 4.44 ± 1.03 per cent, respectively. It has high quality protein with all essential amino acid in balance manner. Among the minerals, it contains calcium, iron, zinc and potassium with high bio-availability of calcium (59.8 ± 0.3 per cent). The factors such as flatulence producing saccharides, trypsin inhibitors, polyphenols, phytic acid, saponin and tannins of rice bean were reported to be in the range of 3.28-5.87 per cent, 55.12-163.98 TIU/g, 0.58-1.82 1.88-8.17, 1.2-3.1 and 0.24-1.55 per cent, respectively. The toxic compounds such as hydrogen cyanide (0.09 mg/100 g) and L-3, 4-dihydroxyphenylalanine (0.36 mg/100 g) is lowest in rice bean. The nutritional advantages of rice bean over the other beans of Vigna family were required to emphasize to induce interest among the researchers, producers and consumers.

Research limitations/implications

In view of the recommended daily requirements with respect of amino acids, vitamin-B and minerals, rice bean could be a major component of the diet to fulfill them. However, the scanty information available on nutritional and functional components of rice bean varieties grown in northeastern India calls for the gap filing research to explore full potential of the bean.

Originality/value

The information about differences among the northeastern varieties of rice bean available on nutritional functional components essentially required the updating of research data to explore full potential and utility of the bean.

Abstract

The purpose of this paper is to assess the logistics performance of national trade corridors in Myanmar based on a theoretical portrayal of multimodal transport in logistics chains combined with the real-time operation of such chains. A cost-time-distance model was used as the core theoretical framework for the discussion. Empirical data related to cost, time and distance was obtained to evaluate national trade corridors in Myanmar. The study explored the performance of trade corridor in the pulses and beans sector from the largest sown and harvest areas to the main seaports in Myanmar. The pulses and beans sector was selected because the country is the 2nd highest exporter in the world and would benefit from improved access to its national seaports. Under the cost-time-distance model used, it was observed that physical infrastructure, institutional environment as well as limited capability of local providers hindered the overall performance of the trade corridors under study.

Abstract

Purpose

The aim of the present nutritional survey was to assess the food consumption pattern of 183 Indian preschool children (four to five years) in Fatehabad district of Haryana.

Design/methodology/approach

Data regarding food frequency, myths and intake were collected with the help of questionnaires and structured interviews. Food consumption patterns were recorded using a 24‐hour recall for three consecutive days.

Findings

The food frequency pattern indicated that wheat was the most accepted cereal among almost all the families and the consumption of pulses was weekly or on alternate days. They consumed roots and tubers frequently but the consumption of green leafy vegetables, fruits and other vegetables depended on the availability only. Most of the families consumed buffalo's milk (93 per cent) and desi ghee (73 per cent) daily. More than half of the respondents' mothers believed bajra, maize (corn), some pulses, bathua (Chenopodium album) and fenugreek leaves, onion, garlic, ginger, desi ghee and sweets are hot foods. According to the 24‐hour recall method for three consecutive days, the daily mean intake of all foodstuffs, namely, cereals, pulses, green leafy vegetables, roots and tubers, other vegetables, fruits, fats and oils, milk and milk products and sugar and jaggery was lower than their respective recommended dietary intake in the daily diets of preschool children.

Originality/value

On the basis of findings of this study, nutrition policy makers can plan the strategies for improving the nutritional status of preschool children who are an important segment of the Indian population.

Purpose

The purpose of this paper is a study designed to utilize Vigna mungo L. (black gram) flour to improve the protein quality of wheat through supplementation. Wheat is utilized as a cereal crop all over the world, but its protein quality is inferior owing to the deficiency of amino acids like lysine.

Design/methodology/approach

Black gram seeds were roasted and germinated and then incorporated at 10, 15 and 20 per cent level in wheat flour. The composite flour was evaluated for its chemical composition, physiochemical properties and rheological characteristics, and cookies were developed from the composite flour.

Findings

Chemical composition of composite flour revealed significant results (p < 0.05). The level of crude protein increased from 9.69 to 11.79 per cent, while ash and crude fat content enhanced from 0.33 to 1.80 per cent and 1.13 to 2.40 per cent, respectively. There was a significant effect (p < 0.05) on the sedimentation value by the addition of black gram in wheat flour. Water absorption of composite flour was higher than control (52.21 per cent), as maximum value was observed in flour having 15 per cent germinated black gram flour (69.45 per cent). Dough development time also increased from 2.90 min to 4.80 min. The pasting properties revealed significant results for all the parameters. Cookies were developed from composite flour, and sensory evaluation has shown that addition of pulse flour at 15 per cent yields cookies with better hedonic response.

Originality/value

The black gram is a locally grown legume crop, but there is a lack of systematic approach for its chemical composition and product development. Scientists are in urge to explore such economical and assessable food ingredients to cope with the nutritional deficiencies prevailing in the developing societies. In this regard, black gram has been recognized as a rich source of nutrients, so it can be exploited to improve wheat protein quality.

Abstract

Purpose

According to the dietary needs of celiac people and very limited variety of commercially available foodstuff, the demand for gluten-free products is increasing every day. Keeping this in view, the present study aims to develop healthier gluten-free chicken products by using different cereal sources and to determine the effect of substitution of wheat flour with gluten-free flours on quality of chicken products.

Design/methodology/approach

Buckwheat, chickpea and rice flours were used as gluten-free flours for the production of chicken products. The physical (yield parameters, crust colour), chemical (proximate composition, caloric value, pH) and sensorial properties of coated chicken products were measured. Duncan's multiple range test and principles component analysis were performed.

Findings

Gluten-free flours were significantly effective on yield parameters, colour, moisture, protein, lipid and caloric value of the samples (p < 0.05). The results showed that gluten-free chicken products had better pickup, lighter appearance, higher cooking yield and moisture, lower cooking loss, oil absorption, lipid and caloric values compared to commercial wheat flour coated control. Regarding the overall impression rank sums, the panellists were more preferred gluten-free products than control group. The samples coated with chickpea flour were best rated by the panellists. The results of the study suggested that the use of chickpea coating flour could be best nutritionally and sensorially suitable option for producing gluten-free chicken product.

Originality/value

This study offers potential healthy alternatives to increase the variety of gluten-free products that celiac people desperately need today.

Abstract

Purpose

The purpose of this paper is to assess the agricultural practices in a drought-prone region of India in an effort to find out how science, technology and innovation (STI) measures can address the existing problems and help achieve sustainable solutions. This study has been planned with two specific objectives: to study the agricultural practices of small and marginal-holding farmers in a drought-prone region and to examine the opportunities for suitable interventions to mitigate the impacts of droughts. The study is based on primary survey conducted in Banda district of Bundelkhand region, Uttar Pradesh, India.

Design/methodology/approach

Empirical survey was done in eight different blocks of a drought-prone region of India using structured questionnaire. The questionnaire was pre-tested with a group of 12 farmers during a workshop through a pilot survey conducted during April 2017. Stratified sampling based on land holdings (small farmers having 1–2 ha of land, medium farmers having 2.1–5 ha of land and large farmers having more than 5 ha of land) and irrigation types (canals and tube wells) were utilised in different blocks of the district for selecting farmers in the surveyed villages.

Findings

Findings suggest that due to various reasons like change in climatic conditions, frequent crop failure, crop diseases and high cost of production, farmers have adopted certain crops which are not suited to their agro-climatic conditions. The paper recommends that farmer’s school or “on-farm training school” have to be initiated to integrate farmers’ traditional knowledge with modern knowledge systems with amalgamation of STI tools.

Research limitations/implications

Uttar Pradesh is divided into nine agro-climatic zones; however, this study is focused on Bundelkhand and may be region specific, though the findings are important for other drought-prone areas.

Practical implications

The paper links the existing agricultural practices and further linking them with farmers’ socio-economic, cultural and environmental settings. Only 17.5 per cent of respondents owned any agricultural equipment due to high cost of farm tools, difficulty in taking equipements on rental basis and lack of sharing tools among the farmers.

Social implications

This paper targets small and marginal farmers in the drought-prone region of India who face the dual shock of climate impacts and poverty. Adoption of modern agricultural practices and use of technology is inadequate which is further hampered by ignorance of such practices, high costs and impracticality in the case of small land holdings.

Originality/value

This paper has advocated for well-organised, efficient and result-oriented STI system to mitigate the adverse impacts of drought-prone agriculture. Farming community in drough-prone areas needs adequate investment, local-specific technology, better quality inputs, real-time information on weather and most importantly latest know-how for sustaining commercial and cost effective sustainable agriculture.

Purpose

The purpose of this paper is to analyze the attribute preferences of buyers of branded pulses and to study the differences in preferences between consumers who purchase from traditional retail stores and those who purchase from modern retail stores.

Design/methodology/approach

A total of 300 respondents (150 respondents from traditional and 150 respondents from modern retail outlet) participated in the study. Conjoint analysis was used to assess the consumers’ attribute preferences for branded pulses.

Findings

For both traditional and modern retail outlets, profile with highest utility was the profile with established brand, low price, high quality and normal packaging.

Research limitations/implications

Shoppers of traditional and modern retail outlets have similar attribute preferences for branded pulses. Hence, it can be concluded that the purchase point makes no difference in consumer attribute preferences.

Practical implications

Results indicate that in both traditional and modern retail outlet customers prefer the same profile of attributes. Two important attributes determining their purchase are also the same. Hence a company entering into the sale of branded pulses will have to focus on these two important attributes irrespective of the purchase point.

Originality/value

The topic is relatively less researched in emerging markets especially where both branded pulses and organized retail are in their nascent stages.

Abstract

Purpose

In low-income economies agriculture plays an important role in promoting economic growth and reducing poverty. Agricultural growth achieved through diversification toward the higher value crops enhance income and mitigate risk. The present study focuses on one of the eastern Indian states namely “Jharkhand”; where agriculture is the mainstay for the 80% of its rural population. The state per-capita income is below the national average; however, it has registered an impressive growth, especially in the agriculture sector in the last one decade. In this study, the authors attempt to identify the components in sources of agricultural growth; the authors also estimate the determinants of overall agricultural growth.

Design/methodology/approach

The study is based on the secondary data from 2000–2001 to 2015–2016. This paper first decomposes the agricultural growth into area, price, yields (technological improvement) and diversification effects through the method of growth accounting approach. Secondly, the study employs the new classical growth model through the ordinary least square (OLS) to examine the determinants of overall agricultural growth.

Findings

The author's findings indicate that there has been a shift in cropping patterns from the cultivation of cereals to non-cereals in the state during the study period. Among the major crops, the area under pulses cultivation has increased by 19% from 2000–t2002 to 2014–2016. The increase in area under cultivation and the diversification in favor of higher-value crops have been the major reasons for the accelerating overall agricultural growth in the state along with improvements in technology. The study reveals that increased use of fertilizer per hectare, capital formation and road density are the main determinants of high agricultural growth in the state.

Research limitations/implications

The study is based on secondary data and based on one state. A primary study to complement this could have been better. The limited data available for some of important variables related to mechanizations are also a limitation of the present study.

Originality/value

Several studies have analyzed the diversification and agricultural growth in India. With our best knowledge this kind of study has not been done so far for the state of Jharkhand in eastern India.
