Abstract

Purpose

Deep-fried banana (Musa spp.) fritters is one of the frequently consumed fruit based snacks in Southeast Asian countries despite its substantial amount of oil content. Consistent with the demand for low fat food with maintained palatability, this study aimed to determine the quality of banana fritters as affected by batter system containing selected hydrocolloids such as pectin (PCN), whey protein isolate (WPI) and soy protein isolate (SPI).

Design/methodology/approach

Banana fritter batters were prepared with individual addition of 2% PCN (w/w), 10% WPI (w/w), 10% SPI (w/w), combination of 2% PCN and 10% WPI, combination of 2% PCN and 10% SPI and control (without hydrocolloid addition). Batter viscosity (Pa.s) and batter pick-up (%) were determined. Banana fritters were analysed for moisture and fat contents, moisture loss, colour, hardness and sensory characteristics.

Findings

Hydrocolloid addition in the batter system resulted in a higher batter pick-up and viscosity in comparison to control batter system. Moisture loss from banana fritters with batter formulation of 2% PCN and 10% SPI was the lowest while the reduction in oil content (55%) was the highest. Banana fritters with inclusion of hydrocolloids in the batter formulation were equally accepted as the control sample by the sensory panelists with a score range between 6 and 7 for most of the sensory attributes evaluated except for oiliness.

Originality/value

Application of PCN and SPI in batter system to develop banana fritters with low oil content, moist fruit core and crunchy crust is reported for the first time. Batter premix containing PCN and SPI can be produced for fresh and frozen fritters preparation.

Abstract

Educational statistics in Britain make depressing reading. Recent surveys show that 80% of children from professional families gain university degrees compared with 14% from working class homes:1 that black children are more likely to leave school with fewer academic qualifications even though they enter the system showing promise: that only a small minority of children from comprehensive schools2 gain places at Oxbridge although 90% of the population attend such schools: that a mere 4% of medical and dentistry students come from working class backgrounds etc. In spite of John Major’s3 optimistic insistence that Britain has become a classless society, it would appear that class differences in educational performance are not disappearing. On the contrary, a recent OECD4 survey, based on data gathered from 16,000 people born in 1958 and 1970 shows that the detrimental effects of inequality of opportunity are actually growing and that the opportunities gap between those from different social backgrounds is no better for those born in 1970 than it was for those born a generation earlier in 1958.

The way of thought and vision and memory is that they often come upon you unexpectedly, presenting nothing new but usually with a clarity and emphasis that it all seems new. This will sometimes happen after a long period of indecision or when things are extremely difficult, as they have long been for the country, in most homes and among ordinary individuals. Watching one's life savings dwindle away, the nest‐egg laid down for security in an uncertain world, is a frightening process. This has happened to the nation, once the richest in the world, and ot its elderly people, most of them taught the habit of saving in early youth. We are also taught that what has been is past changing; the clock cannot be put back, and the largesse—much of it going to unprincipled spongers—distributed by a spendthrift Government as token relief is no answer, not even to present difficulties. The response can only come by a change of heart in those whose brutal selfishness have caused it all; and this may be a long time in coming. In the meantime, it is a useful exercise to consider our assets, to recognize those which must be protected at all costs and upon which, when sanity returns, the future depends.

Abstract

Purpose

This research aims to identify malnutrition risk and perception of malnourished and at-risk elderly individuals on their dietary practices.

Design/methodology/approach

In Phase 1, a cross-sectional study was conducted among 413 elderly individuals aged 60 years and above in agricultural settlements in Kuantan, Pahang, Malaysia. Malnutrition risk was assessed using the Mini Nutritional Assessment Short-Form (MNA-SF). In Phase 2, in-depth semi-structured interviews were conducted among 21 elderly individuals identified in Phase 1. The interviews ceased when data saturation was achieved.

Findings

25.7 per cent (n = 106) of elderly individuals were identified as malnourished and at-risk (MNA-SF score = <12). Age, smoking, income and living status were significantly associated with malnutrition risk (p < 0.05). Thematic analysis revealed four themes that represent elderly individuals’ perception on their dietary practices: the impact of aging on dietary intake; food restriction according to health condition; poor dietary intake due to feeling of loneliness; and perceived benefits of foods for health.

Research limitations/implications

Strategies from multidisciplinary healthcare professionals to eliminate improper dietary practice are required for the maintenance of health, functional independence and quality of life among the elderly.

Originality/value

This research is at the forefront in reporting the elderly individuals’ perception on dietary practice in agricultural settlement. Attention to individual’s health issues and the associated factors that may influence their dietary practices is essential to provide appropriate interventions to achieve optimum nutritional status and healthy aging.

Abstract

Purpose

The purpose of this paper is to investigate the experiences of international tourists with healthy signature food at a tourist destination, and explore the perceptions of food providers regarding the preparation of healthy signature foods. Healthy signature food at tourist destinations has become a crucial factor that can determine whether tourists revisit a tourist destination. The relevant literature review and Urry’s tourist gaze theory indicate that there is a lack of previous research on healthy signature foods among international tourists and food providers. The current study addresses this gap by providing a holistic understanding of healthy signature foods and how they have led to a culture of healthy eating in the tourism industry.

Design/methodology/approach

A case study was conducted in Malacca, a World UNESCO Heritage Site, to identify the experiences of international tourists with local signature foods. A purposive sampling method was selected to gather information from international tourists and food providers. The data were collected through semi-structured interviews to gain a detailed perspective of healthy signature foods.

Findings

The results revealed four thematic analysis outcomes, namely, memorable food experiences, food hygiene consciousness, cultural values and tourist happiness, which directly impact tourists’ satisfaction and intention to revisit. Additionally, aspects such as type of trip, trip frequency and the purpose of the trip influenced tourists’ experiences with healthy signature food. Furthermore, it was found that the selected food providers prepared their meals according to the standard procedures.

Originality/value

The current study extends Urry’s tourist gaze theory by exploring tourists’ perceptions of healthy signature food as well as exploring the way the food is prepared. Healthy signature food has much potential as a means of attracting and sustaining international tourists at tourist destinations. Furthermore, it strengthens the supply chain relationship between international tourists (customers) and food providers (suppliers) in the food tourism industry.

Abstract

The old year has gone, leaving its trail of never‐to‐be‐forgotten memories of strife and turbulence, calamity, disaster, and a huge burden of worries for us to face in the New Year. Few if any will not be deeply grateful to see the passing of 1985. Except for the periods of calm there cannot be a year within living memory to equal it in terms of violence, unparalleled in times of “peace”, collosal in terms of soaring social and public expenditure and financial loss, and in disasters in the world beyond the shores of these islands. It would not be an exaggeration to state that the enormous indebtedness which the year has heaped upon the people will never be wiped off, and it has got to be done mainly by those innocent of any misconduct, and their descendants. The unprecedented scale of street and community violence, the looting, thieving and general crime committed behind the screen of it.

Abstract

Purpose

This paper seeks to examine the milieu of reporting in two villages operating on Koro Island, Republic of Fiji Islands. It aims to analyse how both western‐narrow and traditional reporting offers rural villages extensive opportunities to discharge responsibilities of stewardship, accountability and accounts of the activities of farmers and stores in an agrarian setting, whether the activities are subsistence‐ or cash‐based.

Design/methodology/approach

Fieldwork was conducted in two villages of Koro Island, Nacamaki and Nabuna, to ascertain the milieu of reporting, and open‐ended interviews were conducted with villagers from both villages. The “view from the centre” is adopted here, rather than the “view from the periphery”.

Findings

The study shows that people of both Nacamaki and Nabuna villages have adapted their specific reporting styles according to the circumstances facing them. Despite being only 5 km apart, two sharply contrasting village reporting milieux emerge. One relies greatly on the use of both Traditional oral and Western‐narrow hand‐written reports to fulfil accounts of entities (co‐operative and individual farmers) operating in the village. The other prefers oral communication to any form of written communication to raise accounts of villagers' collectivist and independently charged, agrarian‐based activities.

Research limitations/implications

The study raises three sets of policy issues that are central to the development of reporting in Eastern Fijian villages. Numerous resources are unnecessary in presenting a western‐narrow account of transactions when the accounts are supplemented by a traditional reporting mien. Western‐narrow reporting appears to be well received by co‐operative members and individually oriented farmers. In the absence of Western‐narrow reporting, Traditional reporting seems to serve the needs of both communally oriented and individualistically inclined villagers. The results of the study underlie both the complexity of village life in determining systems of reporting and the fragility of written reporting in Eastern Fijian outer island villages.

Practical implications

The study shows the way in which Eastern Fijian villages resolve subsistence and cash exchanges at the social level, taking into account local conventions, customs, laws, rituals and values.

Originality/value

The originality of the paper rests in considering villagers' own reporting through internal points of reference, providing space for interrelations between traditional Fijian values, the island landscape and the cultural geography.
