Abstract
Purpose
The purpose of this study is to evaluate the yield, physico-chemical and microbiological parameters during the shelf life of the Minas Frescal cheese hand-manufactured by family farms.
Design/methodology/approach
In the milk, analyses of total bacterial counts, somatic cell counts and centesimal composition were performed. The milk coagulation was analyzed, with different curd times (40, 80 and 120 min), with respect to the proximate composition, pH, titratable acidity, yield and microbiological counts. The means were compared using the Tukey test with a significance level of 5 per cent. The most probable number of microorganisms were also determined in water.
Findings
The results for milk quality were within the requirements established in Normative Instruction 62, except for total dry extract. It was found that curd time did not influence the protein and fat in dry matter contents; however, the ash content in cheese of 40 min of curd time (2.8 g/100g) is significantly higher (p = 0.02) than the values found for the other curd times. The same behavior was observed for moisture content (p = 0.04). The parameters determining the cheese quality were outside the standards for human consumption, but this result is directly related to the water conditions, which were outside of potability levels. To meet the requirements established in the legislation, dairy products must follow strict standards of quality hygiene, both the raw material (water, milk) and their employees who act directly in the process.
Originality/value
For the preparation of the Minas Frescal cheese, it takes several steps, from obtaining the milk to the product ready to be consumed, so the importance of doing this monitoring and evaluating its quality.

Abstract
Purpose
The purpose of this paper is to investigate the impact of semi-circular zigzag-channel printed circuit heat exchanger (PCHE) design parameters on heat transfer and pressure drop of flows under high Reynolds numbers and provide new thermal-hydraulic correlations relevant to conditions encountered in natural gas processing plants.
Design/methodology/approach
The correlations were developed using three-dimensional steady-state computational fluid dynamics simulations with varying semicircular channel diameter (from 1 to 5 mm), zigzag angle (from 15° to 45°) and Reynolds number (from 40,000 to 100,000). The simulation results were validated by comparison with experimental results and existing correlations.
Findings
The results revealed that the thermal-hydraulic performance was mostly affected by the zigzag angle, followed by the ratio of the zigzag channel length to the hydraulic diameter. Overall, smaller zigzag angles favored heat transfer intensification while keeping reasonably low pressure drops.
Originality/value
This study is, to date, the only one providing thermal-hydraulic correlations for PCHEs with zigzag channels under high Reynolds numbers. Besides, the broad range of parameters considered makes the proposed correlations valuable PCHE design tools.

Abstract
Purpose
Rio de Janeiro has a high tourism potential, and it is the only Brazilian city among the 100 most visited in the world. However, the National Confederation of Commerce of Goods, Services and Tourism estimates that from the total loss of revenue from tourism activities of the State of Rio de Janeiro in 2017, approximately 29 percent of this loss can be attributed to increased violence in the State. Thus, this study aims to estimate the impact of violence on tourist arrivals to Rio de Janeiro.
Design/methodology/approach
The analysis is based on a sample of tourist arrivals to Rio de Janeiro from 51 countries, for the period between 2003 and 2016. Violence is represented by violent deaths in the State of Rio de Janeiro as well as in the capital. The estimates are based on panel data methodology. This study reports fixed-effect estimates as well as dynamic panel data estimates obtained through S-GMM. The study runs regressions for the full sample and also for two other samples: one with tourists coming from developed countries and another with tourists from developing countries.
Findings
The results reveal that violence negatively impacts tourism to Rio, and it shows that tourists from developed countries are more affected by violence than tourists from developing countries. The findings indicate that for each violent death in the capital of Rio de Janeiro, almost four tourists from developed countries and approximately three tourists from developing countries quit going to Rio de Janeiro.
Originality/value
The paper is one of the few to investigate the impacts of urban violence on tourism. The paper provides two contributions. First, it addresses the effect of violent deaths on tourism, bringing evidence to a destination with a high tourism potential, but which suffers from urban violence. Second, the study is the first to investigate whether this relation is different for tourists from countries with distinct levels of development (and thus with different levels of violence).

Abstract
Purpose
The purpose of this paper is to apply institutional theory to demonstrate if and how mimetic, coercive and normative pressures shape technology adoption in hotels and lead to institutional isomorphism.
Design/methodology/approach
The study uses a qualitative approach involving interviews with managers representing 20 different hotels. A theory-driven thematic analysis was carried out with institutional theory concepts serving as guidance. The data analysis involved three phases, namely, pre-analysis, exploration and finalizing of results. Nvivo software was used to assist with the coding.
Findings
The results show signs of isomorphism on a large scale across several items related to technology adoption practices and uses of technological tools. For instance, hoteliers adopt similar standards, feel the need to mimic competition and all strive to be well-evaluated on sites such as TripAdvisor to achieve legitimacy in the marketplace. In contrast, coercive pressures from trade associations or other governing bodies seem to have little influence on technology adoption decisions. Instead, consumers are seen as powerful agents driving technology adoption in the industry. Regarding normative pressures, certification from third parties is perceived as a more important source of legitimization than recognition from government institutions or trade associations.
Originality/value
This study contributes to the still limited literature on institutional theory in tourism and provides an alternative perspective to understanding technology adoption from a rational technology acceptance model point-of-view.

Adopción de tecnología en hoteles: aplicación de la teoría institucional al turismo
Propósito
la investigación aplica la teoría institucional para demostrar si las presiones miméticas, coercitivas y normativas influyen en la adopción de tecnología en los hoteles y cómo conducen al isomorfismo institucional.
Diseño/metodología/enfoque
el estudio utiliza un enfoque cualitativo que involucra entrevistas con gerentes que representan a 20 hoteles diferentes. Se llevó a cabo un análisis temático basado en la teoría con conceptos de teoría institucional que sirven de guía. El análisis de datos incluyó tres fases: preanálisis, exploración y finalización de resultados. El software Nvivo se utilizó para ayudar con la codificación.
Resultados
los resultados muestran signos de isomorfismo a gran escala en varios elementos relacionados con las prácticas de adopción de tecnología y el uso de herramientas tecnológicas. Por ejemplo, los hoteleros adoptan estándares similares, sienten la necesidad de imitar la competencia y todos se esfuerzan por ser bien evaluados en sitios como TripAdvisor para lograr legitimidad en el mercado. En contraste, las presiones coercitivas de las asociaciones comerciales u otros órganos de gobierno parecen tener poca influencia en las decisiones de adopción de tecnología. En cambio, los consumidores son vistos como agentes poderosos que impulsan la adopción de tecnología en la industria. Con respecto a las presiones normativas, la certificación de terceros se percibe como fuentes más importantes de legitimación que el reconocimiento de instituciones gubernamentales o asociaciones comerciales.
Originalidad/valor
este estudio contribuye a la literatura aún limitada sobre teoría institucional en turismo y proporciona una perspectiva alternativa para comprender la adopción de tecnología desde un punto de vista racional del modelo de aceptación de tecnología.

Abstract
Purpose
Despite the advances in theory and practice about player behaviour in esports gaming literature, there is a lack of understanding as to whether esports are compatible with the values of Olympism and if they should be considered for future Games editions. The current study advances this line of research by examining esports player experiences, their effects on perceiving Olympic values, and the support towards the Olympics in order to verify if differences occur according to the cross-cultural environment.
Design/methodology/approach
Using a sample of 671 esports amateur gamers from three countries (Portugal, Brazil and Japan), structural equation models and a multigroup analysis were performed to analyse the differences in the hypothesized paths existing between the groups.
Findings
Results reveal that player in-game emotional experiences positively influence Olympic values perception across countries. The excellence and friendship values showed a positive effect on support intentions to the Games towards Portuguese and Brazilian players, while the respect value was the strongest predictor towards behavioural intentions in Japan. Cultural backgrounds and game genre in each country can explain player attitude towards the Olympic values shared on the online environment.
Originality/value
This study is able to provide a better understanding of how the Olympic values serve as a gratification in different cross-cultural environments according to the theory of uses and gratifications (U&G) and the theory of cultural dimensions. Complementarily, these findings can be used as valuable information for esports publishers and developers attempting to spread the Olympic values in the esports industry.

Abstract
Purpose
This paper aims to investigate the determinants and the evolution of voluntarily adopted firm‐level corporate governance practices in Brazil from 1998 to 2004 using broad corporate governance scores.
Design/methodology/approach
The authors employ a robust panel‐data procedure that accounts for the main sources of endogeneity to a very representative panel of Brazilian firms over a six‐year period. They address the endogeneity that arises from the simultaneous determination of the quality of corporate governance practices, the dependent variable, and possibly several firm attributes that are commonly employed as the determinants of such practices and are supposedly independent. Specifically, theoretical arguments and empirical evidence strongly suggest that the quality of corporate governance practices may influence some of the variables commonly used as its determinants just as much as they may be influenced by them.
Findings
The paper finds that firm‐level corporate governance practices are steadily improving but there is much room for improvement. Heterogeneity has increased. Voluntarily adhering to new stricter listing requirements is associated positively with improvements in firm‐level corporate governance practices. Reducing or not using non‐voting shares improves corporate governance practices.
Research limitation/implications
The authors found no clear evidence of the influence of other potential determinants of the quality of corporate governance, such as growth prospects, firm size, firm value, and ownership structure. Thus, they doubt previous findings that suggest a causal relationship from value and ownership to corporate governance practices because value and ownership seem to be determined endogenously.
Practical implications
Policies directed to reduce the use of non‐voting shares should be implemented. Creating strict listing requirements that may be adopted voluntarily by firms could be a feasible solution to improve the quality of corporate governance practices in emerging market countries. Firms in an emerging market that find that issuance in the USA became too expensive or demanding may offer a substitute listing environment with credible requirements to foreign investors. Premium listings may partially compensate emerging market exchanges for their loss of trading to major markets.
Originality/value
The paper examines the evolution of the voluntary adoption of corporate governance practices in Brazil from 1998 through 2004 while most studies use cross‐section samples over one or a few years. Further, this is one of a few papers to analyze the impact of ownership structure on the quality of corporate governance practices by segregating control and cash flow rights.

Purpose
The purpose of this paper is to show how to properly use the method of replacement to construct mixed two- and four-level minimum setup split-plot type designs to accommodate the presence of hard-to-assemble parts.
Design/methodology/approach
Split-plot type designs are economical approaches in industrial experimentation. These types of designs are particularly useful for situations involving interchangeable parts with different degrees of assembly difficulties. Methodologies for designing and analyzing such experiments have advanced lately, especially for two-level designs. Practical needs may require the inclusion of factors with more than two levels. Here, the authors consider an experiment to improve the performance of a Baja car including two- and four-level factors.
Findings
The authors find that the direct use of the existing minimum setup maximum aberration (MSMA) catalogs for two-level split-plot type designs may lead to inappropriate designs (e.g. low resolution). The existing method of replacement for searching exclusive sets of the form (α, β, αβ) available in the literature is suitable for completely randomized designs, but it may not provide efficient plans for designs with restricted randomization.
Originality/value
The authors provide a general framework for the practitioners and have extended the algorithm to find out the number of generators and the number of base factor at each stratum, which guide the selection of mixed two-level and four-level MSMA split-plot type designs.

Abstract
Purpose
This study aims to examine the evolution of three science, technology and innovation parks (STIPs) located in the state of Rio de Janeiro, Brazil, from the perspective of the university–industry–government linkages.
Design/methodology/approach
This is a multiple case study organized in two stages: first, bibliographic and documentary research to develop a theoretical framework and description of the innovation environments; and second, interviews and forms filling with 13 managers and stakeholders, combined with participant observation. The analysis and assessment of the evolution of each environment are based on a tool named Amaral’s Model for Innovation Environment Management (AMIEM).
Findings
There are critical issues for the development of STIPs, namely, governance structure, government participation and the relationship with knowledge sources such as universities. The time of existence is not a significant factor in reaching evolution. Although common factors are present in all environments, local particularities, specific characteristics, regional vocations, management leadership and other elements have an impact on park performance.
Practical implications
AMIEM is an assessment tool and a technological product, useful in mapping and evaluating innovation environments.
Social implications
STIPs are dynamic and maturing, requiring active management and engagement with government and companies.
Originality/value
The results allow a better comprehension of the evolution and management of the STIPs located in the state of Rio de Janeiro. Another contribution lies in the organization of information to design public policies.
