Abstract
This chapter analyses the development of oleotourism through the use of local resources in a democratised decision-making process. It explains that the production of olive oil is making a novel contribution to the tourism industry. The authors suggest that oleotourism is also offering opportunities for stakeholder engagement. Therefore, the authors identify key elements that serve as drivers for the development of oleotourism in Jaén. They put forward a framework that can lead to a democratised decision-making process that is intended to support the stakeholders of oleotourism.

Abstract
Purpose – The main aim of this chapter is to analyze Spanish internal and external territorial conflicts, mostly associated with the border effect between two continents with different economic and cultural systems. We assess the impact that the emergence of the new economy, represented by new technologies, R&D, privatizations, and foreign direct investment, has had in South-Spain, particularly in Andalusia, throughout the period 1995–2010. Special attention has been paid to the dynamics of convergence–divergence processes in terms of per capita income with respect to its neighboring different economic and cultural areas: Europe and the Maghreb.
Methodology – For the aforementioned purposes, we suggest applying the game theory approach to solve domestic secessionist conflicts, and the method followed by Mankiw, Romer, and Weil (1992) to address economic conflicts by means of promoting convergence with Europe. We propose economic competition between cities as a way to deal with external territorial conflicts concerning neighboring countries.
Findings – The main results obtained from econometric applications indicate that privatization processes, foreign direct investment, research and investment, and investment in new technologies allow for the real convergence of Spain and Southern Spain with European economies.
Research limitations – This chapter does not address smaller conflicts.
Social implications – Conflicts resolutions promote peace in both continental borders.
Originality – This chapter analyzes the most relevant domestic and external Spanish conflicts. The most important domestic conflicts are the linguistic and cultural conflicts in bilingual regions. The major external Spanish conflicts analyzed herein are both territorial conflicts between Spain and Morocco and Muslim immigration.

Abstract
This paper documents the case of La Verde, a producer cooperative in Andalusia, Southern Spain, whose members grow and sell organic fruit and vegetables. Fieldwork data reveal a range of assessments and practices with respect to just price. Historical experiences of working as day laborers, with little access to cash or other resources informs the members’ radical political views on money, prices, and markets. These ideas modulate exchanges at the local level, and in their political networks. However, working their own land and selling a prized product allows them to generate good market returns from private shopkeepers in cities. The paper proposes that for a price to be considered just, criteria for commensuration, or equivalence between a price and the perceived value of an object must adhere, but adjudications about this vary according to the relationship between exchangers. Rather than an objective just price, the paper considers assessments and judgments about the relation between prices and justice to be contextually defined, contested, and negotiated.

Abstract
Purpose
Entrepreneurship is presented as a vehicle for innovation and social development. Given the importance of entrepreneurship, the objective of this study was to analyze the psychological and sociological dimensions by determining the factors that explain individual perceptions and cultural support for entrepreneurship.
Design/methodology/approach
Using Global Entrepreneurship Monitor (GEM) data obtained from the Adult Population Survey (APS) (N = 2,500) in the region of Andalusia (Spain), a quantitative analysis was carried out, specifically a multivariate analysis based on four-stage linear regressions.
Findings
The variables examined do not explain the psychological and sociological dimensions to the same extent. The results highlight the existence of cultural homogeneity between provinces, the importance of sociodemographic variables and the influence of the entrepreneurial expectations and experiences of the population, especially in shaping individual perceptions towards entrepreneurship.
Research limitations/implications
The replication of the study at the national and international levels is proposed in order to delve deeper into the cultural differences that condition entrepreneurship. Including new variables associated with entrepreneurial human capital could also be of interest.
Practical implications
The results can help to improve the design and implementation of policies and programs aimed at fostering entrepreneurship through the promotion of favorable individual perceptions and entrepreneurial culture.
Originality/value
The originality of this study is the consideration of individual perceptions and cultural support for entrepreneurship as dependent variables, since they are normally incorporated as explanatory factors. The results contribute to the advancement of knowledge of the entrepreneurial phenomenon through two approaches, psychological and sociological.
Propósito
El emprendimiento se presenta como vehículo de innovación y desarrollo social. Dada la importancia del fenómeno, el objetivo de esta investigación es analizar las dimensiones psicológica y sociológica del emprendimiento a través de los factores que explican las percepciones individuales y la cultura de apoyo al emprendimiento.
Diseño/metodología/enfoque
A partir de datos GEM obtenidos mediante la Encuesta de Población Adulta (N = 2,500) en Andalucía (España), se desarrolla una metodología cuantitativa, concretamente un análisis multivariante basado en regresiones lineales de cuatro etapas.
Resultados
Las variables consideradas no explican en la misma medida la dimensión psicológica y la sociológica. Se evidencia la existencia de homogeneidad cultural interprovincial, la importancia de las variables sociodemográficas y la influencia de las expectativas y las experiencias vinculadas al emprendimiento, especialmente en la formación de percepciones individuales.
Limitaciones/implicaciones de la investigación
Se propone la réplica del estudio a nivel nacional e internacional para ahondar en las diferencias culturales que condicionan la creación empresarial. Se considera interesante incluir nuevas variables asociadas con el capital humano emprendedor.
Implicaciones prácticas
Mejora del diseño y la implementación de políticas y programas dirigidos a potenciar el emprendimiento, a través del fomento de las percepciones individuales favorables y la cultura emprendedora.
Originalidad/valor
La originalidad reside en la consideración de las percepciones individuales y la cultura de apoyo al emprendimiento como variables dependientes, ya que normalmente se incorporan como factores explicativos. Se contribuye al avance del conocimiento sobre el fenómeno emprendedor a través de dos enfoques, el psicológico y el sociológico.

Abstract
Purpose
This study aims to analyse the inequalities in access to teleworking in Spain. More specifically, the study examines what factors determine remote working in a pre-pandemic period and during the state of alarm (March 2020). Moreover, the study examines whether telecommuting is related to the likelihood of suffering emotional disorders during lockdowns.
Design/methodology/approach
The methodological approach followed to analyse access to teleworking mainly consists of the estimation of ordered response models. Two datasets are used: the first is the Survey on Equipment and Use of Information and Communication Technologies (ICTs) in Households, conducted by the Spanish National Statistics Institute (INE) in the pre-pandemic period (2018). The second is the Social Survey 2020. Habits and Living Conditions of the Andalusian Population during the State of Alarm, conducted by the Institute of Statistics and Cartography of Andalusia (IECA) once the state of alarm was declared in Spain.
Findings
The results obtained indicate that ICT training is a key element in helping to explain the likelihood of working from home. However, some groups of workers might experience difficulties in their transition to teleworking. This could increase labour market segmentation and hinder the transition to the knowledge economy. Moreover, the findings detect that employees working both on the company premises and from home are more likely to suffer emotional disorders.
Originality/value
The paper sheds new empirical evidence on teleworking in Spain and Andalusia, including some novel methodological aspects to estimate the regressors’ effects on the probability of working from home.

Abstract
Purpose
The purpose of this paper is to present a new methodology to assess the outward connectivity among regional economies in the European Union (EU) and derives policy lessons for the design of regional innovation and competitiveness-enhancing strategic frameworks, with particular reference to research and innovation strategies for smart specialisation (RIS3).
Design/methodology/approach
The authors study the network of inter-regional trade flows in the EU25 in the year 2007. Trade data are taken from the PBL Netherlands Environmental Assessment Agency database and mapped onto weighted directed networks in which the nodes represent regions and the links are flows of goods. The authors measure several structural characteristics of the networks, both global properties and centrality indicators describing the position of individual regions within the system.
Findings
European regions appear to be mostly integrated in the European single market. Strengths and weaknesses of individual regions are discussed based on rankings obtained from network centrality indicators. Specific policy implications in the context of RIS3 are derived in the case of the Spanish region of Andalusia.
Practical implications
The authors show the potential of the methodology for providing a new family of indicators of the external connectivity of regional economies that can be used by regions wishing to develop their own RIS3 for 2014-2020, as required by the EU in the context of the new cohesion policy framework.
Originality/value
The characteristics of a EU-wide inter-regional network of trade flows are obtained and thoroughly discussed for the first time. A unique and original instrument suitable for inter-regional comparison is developed and tested.

Abstract
Purpose
The objective of this study is to determine the efficiency of tourist accommodation companies located in the main tourist area of southern Europe as one of the three elements of the local sustainable development triangle.
Design/methodology/approach
The analysis, carried out using the data envelopment analysis (DEA) methodology on 130 companies, has obtained that from the CCR perspective (results-oriented method when companies present constant returns on the input variables).
Findings
The companies involved are quite inefficient, while which from the BCC perspective (where the input and output variables used in the company respond to a variable and not constant scale) are quite efficient. The efficiency of these companies in the seven provinces of Andalusia has also been analysed to determine if there are patterns that differentiate them and thus be able to propose strategies that improve the sustainability of these territories. The conclusions of the study indicate the need to improve the operational efficiency of rural accommodation companies.
Originality/value
The analysis of efficiency in the hotel sector and even more so in the rural tourism sector is relatively scarce in the literature, especially in Spain. More specifically, Rubio and Román (2006) have demonstrated the existence of scale inefficiencies in hotels, but no evidence has been found in previous studies that this behaviour carries over to accommodation establishments located in the destinations under study.

Purpose
The purpose of this paper is to develop and describe the symbolic value of quality awards as a key indicator of recognition that public organizations have reached in the scope of quality management and continuous improvement.
Design/methodology/approach
The paper provides a description of the evolution of the three series of healthcare quality awards that have been held to‐date in one of the biggest regions of Europe: Andalusia.
Findings
Theoretical analysis of an instrument conceived as an institutionalised way of recognizing quality assurance initiatives in the Andalusian Public Health System. At the same time, the article focuses on the importance of using a reference model to ensure that the process of assessing the projects is systematic and rigorous and therefore stands as a guarantee of transparency within a public administration.
Research limitations/implications
The ultimate outcome is dependent of the geographical context and the behaviours and perceptions of people that have participated as assessment panels.
Practical implications
The conceptual framework provides guidance on what methodology is used to assess the quality projects (process to allocate projects to assessment panels and assessment criteria required) in a complex healthcare system. It serves as a managerial framework to enhance the continuous improvement in all health‐related services.
Originality/value
The paper contributes to create a structured debate between researchers and healthcare leaders regarding the assessment criteria to evaluate healthcare quality projects.

Abstract
Purpose
The purpose of this paper is to develop a methodology to assess urban sustainability within built, urban, territorial and landscape heritage, considering that cultural heritage has recently emerged as one of the keys of urban and territorial sustainability due to its inherent properties of durability and adaptability to changes over time. The implementation pivots on a case study based on medium-sized historical cities. Both academic and official documents consider this urban category as particularly likely to demographic, environmental and economic sustainability.
Design/methodology/approach
The methodology used begins with a theoretical approach, case study delimitation and presentation of existing indicator-based systems that include heritage concerns. Then, the criteria for the selection and creation of indicators are settled to create an ad hoc system. This is tested for the case study of medium-sized historical cities in inner Andalusia, Spain.
Findings
The results obtained are merged and represented for further discussion. First, this methodology states the need of including cultural heritage aspects within sustainability assessment, especially when urban and territorial historic fabrics are involved. Second, a correlation between heritage preservation and the general level of sustainability is revealed.
Originality/value
Finally, the results provide the basis for decisions to academic, technical and administrative spheres regarding urban and territorial sustainability, especially when dealing with the incorporation of cultural heritage factors and the assessment of medium-sized cities-based case studies.
