Abstract

Science Education Outdoors provides students with direct contact with natural phenomena and enables active learning, a key factor in Inquiry Based Science Education (IBSE), a student-centred methodology for the acquisition, construction and understanding of knowledge.

This chapter will describe three case studies which used the IBSE methodology as both a teaching and learning methodology, promoting a deeper understanding of how IBSE can contribute to the success of learning and teaching in outdoor settings.

The three case studies were based on three training courses conducted at the Botanical Garden of the University of Coimbra (BGUC, Portugal). The first case study was the annual regular course for garden educators, and the other two were the two editions of the COInquire professional and accreditation training course for teachers and educators. Involving a total of 70 participants, data was collected through the application of questionnaires.

The study revealed that all participants considered IBSE a successful teaching–learning process and they remarked the opportunities created for the active construction of new knowledge. Strengthened by numerous live educational resources, the use of IBSE in the garden facilitated the questioning and interpretation of nature, supporting the open-minded and well-founded training of teachers, educators and students.

Additionally, the participants considered IBSE to be an effective methodology to boost their professional improvement, contributing to the development of innovative approaches to the curricular programmes on biodiversity and sustainability.

Abstract

This chapter provides an introduction to how the inquiry-based learning (IBL) approach is being used by colleges and universities around the world to strengthen the interconnections between teaching, learning, and research within STEM programs. This chapter provides a synthesis and analysis of the chapters in the volume, which present a range of case studies and empirical research on how IBL is being used across a range of courses across a range of institutions within STEM programs. Based on these findings, this chapter argues that the IBL approach has great potential to enhance and transform teaching and learning. Given the growing demands placed on education to meet a diverse range of complex political, economic, and social problems and personal needs, this chapter argues that education should be a place where students learn “how-to-learn” – where increasingly higher levels of self-directed learning is fostered – and where students grow in the three key areas of learning: affectively, behaviorally, and cognitively. To that end, this chapter argues that IBL, if designed and implemented properly, can be an important approach to enhancing and transforming teaching and learning in higher education.

Abstract

Purpose

The purpose of this study is to identify individual and contextual influences on in-house safety trainers’ role orientation toward the transfer of training (TT).

Design/methodology/approach

The authors tested a model where felt-responsibility for TT mediates the influence of job resources (i.e. autonomy, access to resources, access to information and organizational support) on trainers’ definition of their role and where training safety climate exerts a moderator effect. Data were collected from 201 Occupational Health and Safety (OHS) professionals, all in-house safety trainers, of large public and private companies. Structural equation modeling was used to test the hypotheses.

Findings

The model highlighted the mediating influence of felt-responsibility in the interplay between job resources and role orientation, the moderating influence of safety climate on the relationship of autonomy and organizational support on role definition, but not access to resources and access to information on role definition in the TT. Results suggest that how much safety trainers consider supporting the TT as a part of their overall role is affected by autonomy and organizational support through a sense of responsibility regarding training results, and these effects are influenced by the perceived importance of safety training to the organization.

Research limitations/implications

The study is cross-sectional and used self-reported data, meaning that causal inferences should be carefully drawn. Further studies should explore other sources of influence over felt-responsibility, for example, supervisors’ support for transfer, the relationship between how in-house safety trainers define their role in the transfer process and trainees’ effective application of their new knowledge and skills.

Practical implications

Companies should overtly signal the importance of safety training to in-house safety trainers because it will elicit, by reciprocity, a greater sense of personal responsibility and increased efforts concerning training success.

Originality/value

No previous research looked at how in-house trainers define their role in the TT, as well as the individual and contextual factors that influence their efforts toward the efficacy of training.

Abstract

Purpose

The purpose of this paper is to introduce and discuss the concept of supply chain quality management (SCQM) in education. It then analyses a particular country case study in light of the concept, presenting empirical evidence of the challenges and good practices relating to it.

Design/methodology/approach

The empirical work is based on a country case study which includes data on four higher education institutions and nine secondary schools. Data are obtained from national and institutional documents, as well as from individual and panel interviews. The authors have used content analysis for both data and interview transcripts.

Findings

The authors find that whereas we can think of education systems as supply chains, there are important challenges to SCQM in education, namely, regarding information sharing, trust, integration and leadership. Conversely, the authors have found some ad hoc good practice which could be developed into more systematic SCQM practice.

Research limitations/implications

The study covers only a single case study, and a part of the education supply chain.

Practical implications

The work could inform policy makers as well as institutional leaders on practices that would improve the performance of the education supply chain.

Social implications

Education is a very important activity sector with a strong impact on the well-being of societies. Gains in education performance resulting from better SCQM in education would thus impact us all.

Originality/value

The paper offers a novel way of looking at the education system through the lenses of SCQM; if implemented it could significantly improve the performance of education systems.

Abstract

Purpose

Thistle flower (Cynara cardunculus) aqueous extracts, as rich source of milk-clotting peptidases, have been widely used for cheeses marketed under the Registry of the Protected Designation of Origin, as it is the case of Serra da Estrela cheese, manufactured from raw ewes’ milk and without addition of any commercial starter culture. This paper aims at studying the influence of six different ecotypes of thistle flowers in cheese properties during the ripening and of final products.

Design/methodology/approach

Cheeses were produced with different thistle flower extracts and then the clotting time, weight and colour of cheeses, as well as texture properties and sensorial characteristics, were evaluated.

Findings

The clotting time varied from 47 to 66 min, and the weight loss along ripening varied between 32 and 40 per cent. There was some influence of thistle flower ecotype on the colour during ripening and in the final product. The results of texture analysis revealed significant differences between the thistle ecotypes: crust firmness varying from 2.4 to 5.6 N; inner firmness from 0.82 to 1.82 N; stickiness from −0.5 to −1.60 N; adhesiveness from −3.0 to −11.3 N.s; and Ecotype C was particularly distinguishable. Sensorial evaluation revealed differences among the cheeses, with Ecotype C receiving the highest score for global appreciation.

Originality/value

The usage of different extracts of thistle flower to produce Serra da Estrela cheese with different properties is a novelty, and it allows the possibility of manipulating this parameter in the future so as to produce cheeses with specific characteristics, addressed to different consumer targets.

Abstract

Purpose

Jambolan has be used as a diabetes-treatment aid, and it has become quite popular; studies have been carried out over the years on this fruit because it presents high activity against superoxide anion and hydroxyl radicals due to the bioactive compounds that may play an important role against oxidative stress. No studies have been reported on the effects of pasteurization on the bioactive compounds of jambolan tropical juice. The paper aims to discuss these issues.

Design/methodology/approach

For evaluation of the effects of pasteurization on jambolan juice bioactive compounds, a complete compound and rotational experimental design was carried out by varying temperature (80–90°C) and time (45–75 s). The bioactive compounds (total phenolic, total anthocyanin and antioxidant activity) and the enzymatic activity of enzymes (enzymatic browning) were assessed.

Findings

The study of bioactive compounds in the pasteurized juice of jambolan, showed that the total phenolics (TP) and ABTS antioxidant activity presented statistical significance (p<0.05). The action of enzymes causing enzymatic browning was only observed in the standard sample. The optimization of the pasteurization process with the maximum bioactive compound retention was 91.65°C for 69.45 s. The optimal point found is in agreement with studies on thermal treatment that recommend using short times at high temperatures for better retention of food constituents.

Originality/value

The incidence of chronic diseases in humans has increased significantly over the years, some bioactive phytochemicals present in fruits may help against these diseases, so the production of tropical jambolana juices can help to nourish and regulate the consumer health. Therefore, studying the maintenance of bioactive compounds present in this product could be an alternative for the production of healthier foods.
