Abstract

Purpose

The purpose of this paper is to verify the possible associations between dietary components and the intestinal microbiota in clinical parameters of inflammatory bowel disease.

Design/methodology/approach

In this review, a search in PubMed and Bireme databases was performed. The authors included randomized clinical trials published between 2005 and 2017, only in adult humans with Crohn’s disease or ulcerative colitis.

Findings

Six articles were included by the end of the search. The most widely used intervention was the use of prebiotics, including fructooligosaccharides or fructooligosaccharides with inulin, followed by probiotics. The main findings regarding the microbiota were the increase in the total amount of bacteria and variability (phyla). Clinically, there was improvement in inflammation seen in parameters such as C-reactive protein, interleukins and tumor necrosis factor alpha.

Originality/value

Dietary interventions, especially from symbiotics, can modulate the microbiota, mainly in relation to time, when compared pre- and post-supplementation, and this positively interferes with clinical parameters of inflammatory bowel diseases. However, the studies were quite heterogeneous in population, methodology, intervention, mycobiota analysis and inflammatory markers.

Abstract

Purpose

The purpose of this study is to investigate the effect of a 15-week dietary intake of cactus flour on metabolic parameters, body weight and dietary intake of rats.

Design/methodology/approach

Male Wistar rats were divided into four experimental groups (n = 8-10): control or westernized diets added or not of cactus flour. The following parameters were evaluated during the period of dietary manipulation: body weight, food intake, glycemic and lipid profile (oral glucose tolerance test, metabolic parameters, hepatic and muscular glycogen dosage), visceral and body fat (relative weight to body weight). Data were analyzed using Graphpad Prism®5, p = 0.05.

Findings

Animals fed on a Western-style diet together with flour cactus presented lower weight gain (335.7 ± 20.0, p = 0.05) over the evaluated period, even when the volume of food intake was not different among the groups. The addition of cactus flour to a Western-style diet appears to lower glucose levels at 30 and 60 min (p = 0.05), as shown in the glucose tolerance curve. There was a downward trend does fat stores, cholesterol levels and triglycerides. Therefore, it was concluded that this addition cactus flour is effective even when the diet is hyperlipidic, demonstrating its ability to attenuate risk parameters for the occurrence of metabolic syndromes such as sub fraction high cholesterol levels and glucose tolerance.

Originality/value

The addition of functional foods to diets may work to improve the harmful effects of this type of diet. Opuntia ficus indica has high nutritional value and has hypoglycemic and hypolipemic properties besides being antioxidant.

Abstract

Purpose

The purpose of this paper is to evaluate the effect of the bodying agents (erythritol, sorbitol, xylitol and polydextrose) and their mixtures on the preparation of mixed Brazilian Cerrado fruit preserves (marolo, soursop and sweet passion fruit).

Design/methodology/approach

The simplex mixture design was used for product optimization and the preserves evaluated by physical, physicochemical and sensory properties. The research data were analyzed using regression equations on SAS University and exploratory analysis by principal component analysis and parallel factors techniques on Sensomaker software.

Findings

The results show that erythritol and polydextrose bodying agents should not be used as pure components because they provoked changes in the properties of the final product and negatively influenced the sensory attributes. While the high concentrations of xylitol and sorbitol provided better sensorial acceptance, being considered, therefore, good substitutes for sucrose.

Practical implications

This research has shown it is feasible to use bodying agents in the preparation of mixed Brazilian Cerrado fruit preserves without added sugar.

Social implications

The development of mixed preserves could increase population access to the Brazilian Cerrado fruits. In addition, sugar-free preserves are a viable alternative for adding value to the product and satisfy all the consumers.

Originality/value

The combination of properties of two or more fruits and use of bodying agents can improve sensory, physical and physicochemical characteristics of the final product. However, there are technological challenges to evaluate in the preparation of mixed Brazilian Cerrado fruit preserves without added sugar.

Abstract

Purpose

This paper aims to understand the relationship between family togetherness and consumption. This is important given the inherent tension permeating discourses of family consumption and a lack of a critical understanding about how togetherness is experienced, expressed and performed. The Nintendo Wii and Wii gaming were explicitly chosen to engage in a more nuanced understanding and to provide a route to access families in their natural consumption habitat.

Design/methodology/approach

An interpretive ethnographic methodology was utilised to investigate family consumption in context and used in conjunction with the biographical narrative interpretive method to capture reflective and detailed informants’ consumption experiences. Holistic content analysis was used to interpret and aid thematic development.

Findings

Opportunities for idealised family togetherness afforded by the Wii still appeal to family members. Idealised family togetherness is accessed through collective, “proper” Wii gaming but is ultimately unsustainable. Importantly, the authors see that relational togetherness and bonding is also possible, and as such, the lived experience, expression and performance of family togetherness are not prescriptive.

Originality/value

Family togetherness is a useful and important lens through which to understand the dynamic relationship between family, consumption and the marketplace. The authors suggest that current conceptualisations of togetherness are too idealised and prescriptive and should be open to critical rethinking and engagement by both academics and industry practitioners to communicate with and about families and to explore how to be part of relevant and meaningful family conversations.

Abstract

Purpose

This paper aims to highlight the contribution of ecological fairs to the promotion of sustainability in university campuses, based on a case study carried out at the University of Passo Fundo, located in Southern Brazil.

Design/methodology/approach

Producers and consumers of the ecological fairs were interviewed to analyse how the social, economic and environmental spheres of sustainable development are impacted by these fairs. In total, 24 interviews were conducted.

Findings

The results showed how fairs positively impact the academic and local community while bringing sustainability into university campuses.

Research limitations/implications

The main limitations of this study were the number of interviews and the short period during when the study was conducted.

Practical implications

This case study demonstrated how the promotion of ecological fairs on a university campus plays an important role in the implementation and practice of sustainability and can serve as an example for other institutions that intend to work on similar projects.

Originality/value

This paper contributes to the literature by providing a discussion on how ecological fairs represent a good addition in the process of universities to become more sustainable and which aspects of each sustainability sphere are involved.

Abstract

Purpose

The purpose of this paper is to evaluate the pathological, biochemical and redox state parameters of liver tissue in Wistar rats treated from birth to adulthood (119 days) with cafeteria diet.

Design/methodology/approach

During the lactation, 6 liters of Wistar rats (dam + 8 pups each) were fed one of two diets: control (CTRL; n = 3) or cafeteria (CAF; n = 3) diets and water ad libitum. After weaning, the males were placed in individual cages, receiving the same diet offered to their respective dams (CTRL or CAF; n = 18) until adulthood. The following parameters were evaluated: absolute and relative liver weight; blood, liver and feces biochemistry; liver histology; and redox state of the liver.

Findings

When assessing the relative and absolute organ weight, no significant differences were found between the groups. The Cafeteria group exhibited higher values of serum LDL-c (p = 0.008), VLDL-c (p = 0.03) and triglycerides (p = 0.01), as well as several micro and macrovacuoles of fat accumulation, higher hepatic lipid (p = 0.03) and cholesterol (p = 0.0001) levels regarding Control group. Cafeteria group showed greater expression of glutathione-s-transferase (p = 0.03) and superoxide dismutase (p = 0.005) enzymes compared to the control group. In the case of the markers of oxidative stress, there was no difference between the groups.

Originality/value

A simple and standardized cafeteria diet caused an accumulation of fatty acids in liver tissue, inducing a state of hepatic steatosis besides an increased expression of antioxidant enzymes.

Abstract

This study reports on a four-month ethnographic project conducted among young Catholic women in Mumbai, India. Here, the author examines how the media consumption of participants is implicated in reconstituting Indian national identity. Because Hinduism is closely tied to conceptualizations of Indianness and because women continue to be marginalized in Indian society, Catholic women in India are viewed as second-class citizens or “not Indian enough” or “appropriately Indian” by virtue of their gender and religious affiliation. However, through media consumption that emphasizes hybridity, participants destabilize narrow definitions of Indian identity. Specifically, participants cultivate hybridity as central to an Indian identity that is viable in an increasingly global society. Within this formulation of hybridity, markers of their marginalization are reframed as markers of distinction. By centering hybridity in their media consumption, young, middle-class Catholic women (re)imagine their national identity in translocal cosmopolitan terms that subverts marginalization experienced by virtue of their religion and leverages privileges they enjoy by virtue of their middle-class status. Importantly, this version of Indian identity remains elitist in that it remains inaccessible to poor women, including poor women of minority groups.

Abstract

Purpose

Excessive sodium intake is associated with several diseases. Accordingly, several measures, including microparticulate salt, have been adopted to reduce the salt contents of food products. However, no studies have reported the effectiveness of microparticulate salt in semisolid and liquid products. Accordingly, the purpose of this paper is to evaluate the application of microparticulate salt to reduce sodium contents in semisolid products.

Design/methodology/approach

The optimal salt content to be added in butter was defined by the just-about-right-scale test. Butter samples were prepared using microparticulate salt to achieve 25, 50 and 75 per cent reductions in conventional salt concentrations. Multiple comparison tests were performed to evaluate sample taste.

Findings

The ideal concentration of conventional salt to be added to butter was 2.16 per cent. Discriminative tests showed that samples with 25 and 75 per cent salt reduction showed significant differences (p ⩽ 0.05) compared with butter prepared at the ideal salt content, whereas the sample with 50 per cent salt reduction had no significant difference (p > 0.05). Thus, microparticulate salt showed higher salting power than conventional salt. These results indicated the effectiveness of microparticulate salt in the preparation of semisolid products with sodium reduction.

Research limitations/implications

More detailed studies about the reduced-sodium butter shelf life are necessary to verify the microparticulate salt application in the product preparation. Moreover, microparticulate salt application in semisolid and liquid products elaboration must be more investigated to better elucidate its practicability of reducing sodium content in these kinds of products. Therefore, researchers are encouraged to test the proposed propositions further.

Practical implications

Microparticulate salt has been successfully applied to reduce sodium in solid products, being added to the finished product surface. However, there are no studies that report its effectiveness in semisolid and liquid products, such as the butter, in which the salt is added during the product preparation. Thus, this research provides new scientific information to the food industry and research fields, to expand the knowledge of reduced-sodium products development using microparticulate salt with sensory quality.

Originality/value

No studies have evaluated the application of microparticulate salt for semisolid product preparation. Therefore, the findings will support the development of healthy products.

Abstract

Purpose

The purpose of this paper is to analyze the development of rural warehouses condominiums (or “condos”) as new rural configurations in the Brazilian agribusiness from the perspective of the theory of collective action.

Design/methodology/approach

A systematic literature review was complemented with multiple case studies based on interviews and direct observation. Content analysis was used to interpret the secondary and primary data.

Findings

Rural warehouse condos can be characterized as a collective action which is a new business model in Brazilian agribusiness. This new initiative has several advantages: reduction of the warehouse deficit and other logistical bottlenecks; strategic commercialization of production; reduction of logistical costs; inclusion of smallholders in the economy and, consequently, the generation of income for smallholders and their participation in the market.

Research limitations/implications

The study used a qualitative approach and findings and discussion are inherently interpretative.

Social implications

Understanding the organization of rural warehouse condos supports the inclusion of smallholding farmers and income generation. This creates a social benefit through rural growth and economic development. Some constraints related to the lack of public policies, specific credit lines in financial institutions, the problem of non-regularized rural areas, lack of transparency and conflicts among the members can limit expansion.

Originality/value

Rural warehouse condos are expanding mainly in the south region of Brazil, where smallholders are concentrated. In this new configuration, they can engage in an association to obtain several benefits, such as reduced logistics costs, better access to financing and increased bargaining power with suppliers. As this research dealt with a relatively new and poorly studied topic, it contributes to the development of new studies to map innovative warehousing practices.

Abstract

Purpose

The purpose of this paper is to first present potential areas of research for measuring sustainability performance that emerged in a joint researcher–practitioner workshop at the 19th Environmental and Sustainability Management Accounting Network Europe Conference, organized in cooperation with the World Business Council for Sustainable Development. Second, the methodology applied to gain these insights, the world café approach, is critically reviewed.

Design/methodology/approach

The applied method, a world café approach, facilitates collaborative dialogue and was used in the workshop to uncover underlying research themes. A generalized process flow diagram for a world café is presented, highlighting critical aspects that can guide researchers considering the use of the world café method. The results are structured by means of the 5 W (who, what, where, when, why) and 2 H (how) questions, also known as the elements of circumstance.

Findings

Key topics discussed by conference attendees are identified and an overview of potential areas of research are established concerning “measuring sustainability performance”, with a topical focus on impact measurement and value of sustainability. Furthermore, based on the topics identified by practitioners and researchers, this paper develops a list of questions that can guide future research. Finally, the world café method as a means of generating insights into complex topics such as sustainability performance is evaluated.

Practical implications

The list of research questions identified in this paper can serve as guidance for researchers for selecting relevant, practice-oriented research topics. The value of the world café method as an approach to facilitating the generation of participatory and collaborative insights was confirmed for sustainability management. The generalized process flow diagram can act as a starting point when considering the world café method for facilitating large transdisciplinary groups.

Social implications

The world café is a method for facilitating practitioners and researchers exchange, and thereby presents an opportunity for spanning the research–practice gap. By bringing practitioners and researchers together to identify research areas, future research is more likely to have positive social implications.

Originality/value

The paper presents a recent interpretation of future research gained from a large number of sustainability professionals, including practitioners and researchers, by bringing them together using a world café. The world café is a valuable method for a collaborative set-up with immediate feedback loops, which encourages dialogue, in contrast to surveys or individual interviews, on future developments in the field.
