Abstract

Purpose

The purpose of this paper is to present and discuss the external factors of the solar dryer design that influenced the thermal efficiency of the solar dryer that contribute to the better quality of dried food products.

Design/methodology/approach

From the reviewed works of literature, the external factors including the drying temperature, airflow rate and relative humidity have significant effects to increase the rate of moisture diffusivity of the freshly harvested products during the drying process. The proper controls of airflow rate (Q), velocity (V), relative humidity (RH%) and drying temperature (°C) can influence the dried product quality. The dehydration ratio is the procedure to measure the quality of the dried food product.

Findings

The indirect solar dryer including the mixed-mode, hybrid and integrated was found shorter in drying time and energy-intensive compared to sun drying and direct drying. The recommended drying temperature is from 35.5°C to 70°C with 1–2 m/s velocity and 20%–60% relative humidity. The optimum thermal efficiency can be reached by additional devices, including solar collectors and solar accumulators. It gives a simultaneous effect and elongated the drying temperature 8%–10% higher than ambient temperature with 34%–40% energy saving. The recommended airflow rate for drying is 0.1204 to 0.0894 kg/s. Meanwhile, an airflow rate at 0.035–0.04 kg/m2 is recommended for an optimum drying kinetic performance.

Research limitations/implications

This paper discusses the influence of the external factors of the solar dryer design on the thermal performance of the solar dryer and final dried food products quality. Therefore, the findings cannot serve as a statistical generalization but should instead be viewed as the quantitative validation subjected to fundamentals of the solar dryer design process and qualitative observation of the dried food product quality.

Practical implications

A well-designed of solar dryer with low operating and initial fabrication cost, which is simple to operate is useful for the farmers to preserve surplus harvested crops to an acceptable and marketable foods product. The optimization of the external and internal factors can contribute to solar dryer thermal performance that later provides an organoleptic drying condition that results in good quality of dried product and better drying process. The recommended drying temperature for a drying method is between 35°C up to 70°C. Drying at 65.56°C was effective to kill microorganisms. Meanwhile, drying at 50°C consider as average drying temperature. The recommended airflow rate for drying is 0.1204 to 0.0894 kg/s. Meanwhile, air flowrate at 0.035–0.04 kg/m2 is recommended for optimum drying kinetic performance. The recommended value of aspect ratio and mass flow rate is 200 to 300 for an optimum evaporation rate. The good quality of dried products and good performance of solar dryers can be developed by proper control of airflow rate (Q), velocity (V), relative humidity (RH%) and drying temperature (°C).

Social implications

The proper control of the drying temperature, relative humidity and airflow rate during the drying process will influence the final dried food products in terms of shape, color, aroma, texture, rupture and nutritious value. It is crucial to control the drying parameters because over-drying caused an increment of energy cost and reduces the dry matter. The quick-drying will disturb the chemical process during fermentation to be completed.

Originality/value

This study identifies the potential of the solar drying method for dehydrating agricultural produces for later use with the organoleptic drying process. The organoleptic drying process can reduce mold growth by promising an effective diffusion of moisture from freshly harvested products. The research paper gives useful understandings that well-designed solar drying technology gives a significant effect on dried product quality.

Abstract

Air cargo was traditionally considered as a by-product of passenger air transport. However, in the last decade a defined strategy for air cargo has gained a key position in the strategies of most combination airlines, contributing largely to the cash and profit levels of these airlines. The global air cargo industry is nowadays a mature industry with over 60 billion USD in direct revenues. The strategic context is, therefore, far beyond the basic entrepreneurial framework in which an emerging and young industry tends to operate. This chapter aims to gain an enhanced insight into the strategies of airlines that transport cargo, either in the bellies of passenger aircraft or in full-freighter aircraft. A Cluster Analysis generates a typology of seven representative clusters of air cargo operators’ strategy models. The typology proposes a spectrum of strategies for air cargo, ranging from the cluster group “Carpet Sellers” up to the “Cargo Stars” cluster. While the former tend to be the small airlines or all-cargo carriers which barely manage to cover their costs with their revenues, the latter are profitable, very large globally operating airlines that focus on both passengers and cargo with passenger and freighter aircraft. Within this spectrum there are five other main strategy groups: the “Basic Cargo Operators,” the “Strong Regionals,” the “Low Cost Low Yielder,” the “Large Passenger Wide-body Operators,” and the “Premium Cargo Operators.” Our findings suggest the existence of superior strategy models that could be defined as “winning strategies” that differ according to airline size.

Abstract

Purpose

This research aims to explore how consumers' local brand choices differ between air-polluted days and clean days, and why the difference occurs.

Design/methodology/approach

Two studies were conducted. Study 1 used the longitudinal consumption data of various yogurt brands and daily air quality indexes in 2014 and 2015. Study 2 conducted three rounds of surveys on a clean day, a general air-polluted day and a seriously air-polluted day.

Findings

The findings indicate that consumers show less tendency of attribution and compensatory consumption during air-polluted days, which in turn decrease their willingness to choose local brands.

Practical implications

Implications are provided for future research and marketing practice, especially for local companies that rely heavily on local consumers, and retailers in heavy air-polluted areas.

Originality/value

This paper is the first to illustrate the influence of air pollution on consumers' local brand choices, and it extends current understanding on air pollution and consumer choices by discovering psychological process underneath to explain the effect.

Abstract

Assessing air cargo strategy from an airport's perspective is relatively novel, and it seems little attention has been paid to this research area. This chapter will address this research gap by introducing an Airport Cargo Strategy Canvas, designed to help build cargo strategies for individual airports.

The Airport Cargo Strategy Canvas can be used as a tool to analyze and improve the air cargo strategy of an airport. The first part of this chapter will explain the different components of the Airport Cargo Strategy Canvas more in detail. The horizontal axis on the canvas differentiates between exogenous and endogenous drivers of airport competitiveness. The vertical axis distinguishes between the airport product and the airport market. The canvas also considers potential disruptors and principal shareholders' objectives. The different components of the canvas allow the analyst to dig into the main features and differentiators of respective airports. The canvas might also be helpful to structure and compare the strategic components and framework of their own or competitors' cargo strategies.

In the second part, the Airport Cargo Strategy Canvas was applied to Brussels Airport to analyze its cargo strategy. The canvas showed several strengths and weaknesses, opportunities and threats in its current cargo strategy. The completed canvas will let Brussels Airport's executives explore and analyze the strategy of their main competitors and peers' strategy and help them identify potential gaps in their strategies.

Abstract

Purpose

The purpose of this paper is to contribute to debates about the relationship between trust and control in the governance of inter-organisational relationships. In particular, the authors focus on the question of how the relationship between trust and control shifts over time.

Design/methodology/approach

An in-depth case study was conducted in a company operating in the aerospace industry. The authors aim to understand this company’s practices and, at the same time, to use the case study to deepen the knowledge of the complex trust/control nexus. The authors follow the changes in the relationship between trust and control as the company restructured its supply chain, and discuss issues which it had to address in the later phases of the supply chain restructuring.

Findings

The paper illustrates the duality of the trust/control nexus. The authors show how the studied company coped with the complex relationships with its suppliers as collaboration increased. The authors identify particular control mechanisms that the company developed to manage such complexity, such as a supplier strategy and a relationship profile tool.

Research limitations/implications

The paper studies supply chain restructuring and the changing relationship of trust and control over time only from the perspective of the assembler/manufacturer which “owns”/manages the supply chain.

Originality/value

The authors observe a move from inter-personal trust to inter-organisational trust. Furthermore, the authors illustrate how managers can intervene to maintain and stabilise trust and ensure that trust and control do not degrade or escalate beyond desirable levels.

Abstract

Detonation of landmines buried to different depths in water‐saturated sand is analyzed computationally using transient non‐linear dynamics simulations in order to quantify impulse loading. The computational results are compared with the corresponding experimental results obtained using the Vertical Impulse Measurement Fixture (VIMF), a structural mechanical device that enables direct experimental determination of the blast‐loading impulse. The structural‐dynamic/ballistic response of the Rolled Homogenized Armor (RHA) used in the construction of the VIMF witness plate and the remainder of the VIMF and the hydrodynamic response of the TNT high‐energy explosive of a mine and of the air surrounding the VIMF are represented using the standard materials models available in literature. The structural‐dynamic/ballistic response of the sand surrounding the mine, on the other hand, is represented using our recent modified compaction model which incorporates the effects of degree of saturation and the rate of deformation, two important effects which are generally neglected in standard material models for sand. The results obtained indicate that the use of the modified compaction model yields a substantially better agreement with the experimentally‐determined impulse loads over the use the original compaction model. Furthermore, the results suggest that, in the case of fully saturated sand, the blast loading is of a bubble type rather than of a shock type, i.e. the detonation‐induced momentum transfer to the witness plate is accomplished primarily through the interaction of the sand‐over‐burden (propelled by the high‐pressure expanding gaseous detonation by‐products) with the witness plate.

Purpose

This paper aims to study the motivations for purchasing protective products.

Design/methodology/approach

Empirical microeconomic research.

Findings

The results show that comparing with ordinary families, families vulnerable to environmental conditions, including prepregnant, pregnant and postpartum families, are not intended to consume more protective products. Among the above three types of families, postpartum families consume the most, followed by pregnant families, and prepregnancy families consume the least. The results also showed that a higher level of economic development, more prevalent Internet access and higher levels of education also increase the consumption of protective products.

Environmental conditions in a food manufacturing plant have a great impact on food safety and product quality. The purpose of this paper is to discuss the various components that make up the environment or contribute to the quality of the environment.

Design/methodology/approach

The paper examines the way in which the air quality in the factory environment is defined, and discusses the affect that staff flow, product flow and factory finishes has on the environmental conditions in the factory.

Findings

There is no clearly defined guideline which adequately covers the environmental control of food plants.

Originality/value

The concept of defining food plant environments by way of cleanroom classification is relatively new in the food industry.

Abstract

THE alternative definitions of combustion efficiency based on the ratio of actual to theoretical heat releases and of theoretical to actual fuel requirements are discussed in relation to the practical need for reckoning enthalpies above a datum temperature. Empirical expressions are obtained which enable the enthalpies of the reactants and the products of combustion to be calculated to an adequate standard of accuracy. The appropriate heat of combustion of the fuel is defined and the effect of temperature examined. The difference in calculated efficiencies obtainable from the alternative definitions are then determined under extreme conditions, and a practical formula developed. Finally, experimental errors in combustion efficiency determination are examined for both the heat balance and gas analysis techniques.
