Abstract

Food safety is now big news. As a result of all the recent media publicity, there has been a growth in consumer concern about possible hazards linked to specific foods. Individual products and product ranges can suddenly find themselves highlighted in newspaper articles and in radio and television programmes. This can cause an immediate fall in sales so that large quantities of food have to be destroyed. Inevitably, this has an adverse effect on the profitability of the producers. Factories have been closed down with a consequent loss in jobs and company profits have fallen.
