TY - JOUR AB - the situation and the problem Manual skills in the meat industry are obviously present in the High Street butcher's shop and it is in this retailing area that the more traditional type of apprentice training is mainly to be found. But it is important to realise that large parts of the meat industry have moved out of the shop to a factory situation. In the factory, as compared with the shop, there is a need for employees with high skill levels in a narrow range of tasks. In other words skilled operatives rather than craftsmen are needed, particularly in modern slaughtering and processing systems.
