Abstract
Details a study in five European countries on the market for nutritionally modified foods, particularly new balanced products. These are defined, and the major themes of reduction, substitutes, additions and “free from” are considered. The impact of trends on consumers, by country and region, and by typology are discussed. Practical consequences for production structures, marketing and distribution channels, and commercial and institutional catering are examined. Some marketing requirements and laws are suggested.
